Summary

Yosef Karo Translation:Shulchan Aruch/Yoreh Deah…

But the shochet himself should not slaughter unless he knows the laws of shechita, is an expert, and has slaughtered three times in front of a sage and expert in the laws of shechita so [the sage] knows he is accustomed and swift and that he will not faint (Tur in the name of Rambam) . Therefore our custom is a man should not slaughter unless he has received an acceptance (kabbalah) of a sage (Agur in the name of Halahkot Eretz Yisrael) . And a sage should not give him such a kabbalah unless he knows [the shochet] knows the laws of shechita and is an expert with his hand.
