“ White mushroom sauce, which is so delicious with boiled fowl, can be made by adding a tin of mushrooms to some good béchamel sauce. Béchamel sauce is some very strong stock, mixed with some boiling milk, or, still better, boiling cream, thickened with a little butter and flour. When the tin of mushrooms is added to the white sauce, the whole should be rubbed through a wire sieve with a wooden spoon. ”

“ Make a pint of Béchamel sauce by boiling together equal quantities of good white stock and cream in an enamelled saucepan, also a strip of fresh lemon rind and two or three shallots. Add a mixed teaspoonful of salt and pepper, thicken with a spoonful of arrowroot, and let it boil well. Remove the lemon rind and shallots, and put in the pieces of turbot to heat through, all skin and bone removed. When quite hot, pour all together on to a hot dish ”

“ Mode.—Boil the eggs hard; put them into cold water, peel them, take out the yolks whole, and shred the whites. Make 3/4 pint of Béchamel sauce by recipe No. 368; add the parsley, and, when the sauce is quite hot, put the yolks of the eggs into the middle of the dish, and the shred whites round them; pour over the sauce, and garnish with leaves of puff-paste or fried croûtons. There is no necessity for putting the eggs into the saucepan with the Béchamel; the sauce, being quite hot, will warm the eggs sufficiently. ”
