“ After cooking vegetables until tender in salted water, they should be drained and served with a cream sauce poured over. The art of making a smooth, creamy sauce of the proper consistency is easily acquired. A good rule for "common cream sauce" is 1 cup of milk, water, or meat broth, thickened with 1 tablespoonful to 11⁄2 tablespoonfuls of flour, or a combination of flour and cornstarch. Mix flour, or cornstarch, with a small quantity of cold milk or water, to a smooth paste, before adding it to liquid; add, usually, one tablespoonful of butter. ”

“ Cream Sauce.—Bring 2⁄3 pint cream slowly to boil; set in stewpan boiling water; when it reaches boiling point add sugar, then pour slowly on whipped whites of 2 eggs in bowl; add 1 teaspoon extract vanilla and use.
Creamy Sauce.—Cream 2 tablespoons butter; beat in by degrees 1⁄2 cup powdered sugar, 2 tablespoons each of thick cream and sherry. Beat long and hard. Just before serving stand bowl over hot water and beat till sauce looks creamy but is not hot enough to melt the butter.
Custard Sauce.—1 pint milk, yolks 4 eggs, 1⁄2 cup sugar. Set over fire and stir until thick.

“ CREAM SAUCE FOR FISH. Knead very smoothly together with a strong-bladed knife, a large teaspoonful of flour with three ounces of good butter; stir them in a very clean saucepan or stewpan over a gentle fire until the butter is dissolved, then throw in a little salt and some cayenne, give the whole one minute’s simmer, and add, very gradually, half a pint of good cream; keep the sauce constantly stirred until it boils, then mix with it a dessertspoonful of essence of anchovies, and half as much chili vinegar or lemon-juice. ”
