Bayou Boeuf

“ The numerous streams by which they are watered abound in the valuable fur-bearing beaver, whilst every species of game common to the west is found here in great abundance. The Bayou Salade especially, owing to the salitrose nature of the soil and springs, is the favourite resort of all the larger animals common to the mountains; and, in the sheltered prairies of the Bayou, the buffalo, forsaking the barren and inclement regions of the exposed plains, frequent these upland valleys, in the winter months ”

“ Yes, horses, oxen, dogs, Kaffir, Bushman, and yägers, were all affected by the screech of that bird, as it pealed along the rocks, and echoed through the glen. All recognised in it the warning cry of the Pique-Boeuf!
An account of this singular bird will explain the cause of the consternation which its note had thus suddenly produced.
The “Pique-Boeuf” is about the size of a starling, of a greyish colour over the body, with short wings, and tail somewhat of a darker hue. Its feet are formed for grasping, and its claws are hooked and compressed. The most remarkable part of the bird is its bill. ”

“ So not getting any peace, those excited cows, still pestered with the flies, started on another stampede and this time it was towards the bayou and I knew that if they came to the weak place in the rail fence, where we sometimes climbed over, they would make a dive through it and rush into the brush and through the bushes and down the hill and in a jiffy would be in one of the sluggish ends of the bayou in the shade, which flies don’t like. ”

“ It took us almost an hour to get Dragonfly’s pop’s cows out of the bayou, we having to drive them out on account of the cornfield being on the other side, and you can’t trust a cow with a cornfield any more than you can trust a boy or a girl with an open cookie jar. ”

“ The cow was near the calf, and both were lying down. Feed along the creek was plentiful, and every day she found a fresh place to tether it, since tether it she must, for if she did not, it would stray with the cow out on the plain. She had plenty of time to go after it, but then there was baby; and if the cow turned on her out on the plain, and she with baby,—she had been a town girl and was afraid of the cow, but she did not want the cow to know it. She used to run at first when it bellowed its protest against the penning up of its calf. ”

“ The beef of the wild buffalo-cow is far superior to that of domestic cattle, but the “tit-bits” of the same animal are luxuries never to be forgotten. Whether it be that a prairie appetite lends something to the relish is a question. ”

“ Their meat is tender and most delicious after one has learned to like the "gamey" flavor. And a change in meat we certainly do need here, for unless we can have buffalo or antelope now and then, it is beef every day in the month—not only one month, but every month.
The prairie-dog holes are great obstacles to following hounds on the plains, for while running so fast it is impossible for a horse to see the holes in time to avoid them, and if a foot slips down in one it means a broken leg for the horse and a hard throw for the rider, and perhaps broken bones also. ”

“ A poor, half-starved range cow with her calf which the round-up had overlooked in the fall, stood at bay against a steep cut bank. Before them squatted five great, gaunt wolves intent upon fresh beef for their supper. But the cow’s horns were long, and sharp, and threatening, and the calf snuggled close to her side, shivering with the cold and the fear of death. The wolves licked their cruel lips and their eyes gleamed hungrily—but the eyes of the cow answered them, gleam for gleam. ”

“ In former times the Bayeye possessed numerous herds of cattle, but these passed into the hands of the Bechuanas upon their assuming the mastery over the country. They are permitted, however, to rear a few goats, which they do less for the sake of the milk and flesh than for the skins, which are converted into sleeping rugs, and carosses for wear. They also keep a few barn-door fowls, but apparently of a very ordinary breed.
They derive their chief subsistence from the produce of the soil, which is fertile, yielding the necessaries of life in abundance, and with little labor. ”

“ From Devil’s Tooth they came, and from Lava Bed way, and from the rough sandstone ridges of Mill Creek. Two by two the riders, mere moving dots at first against a monotone of the rangeland, took form as they neared the common center. Red cattle, black cattle, spotted and dingy white, with bandy-legged, flat-bodied calves keeping close to their mothers, kicking up their heels in sheer joy of their new life when the pace slowed a little, seeking a light lunch whenever the cows stopped to cast a wary glance back at their pursuer. ”

“ A bayou runs irregularly across this low land, the bottom of which, however, is above the surface of the Big Black at ordinary stages. When the river is full water runs through it, converting the point of land into an island. The bayou was grown up with timber, which the enemy had felled into the ditch. At this time there was a foot or two of water in it. The rebels had constructed a parapet along the inner bank of this bayou by using cotton bales from the plantation close by and throwing dirt over them. The whole was thoroughly commanded from the height west of the river. ”

“ The good buffalo horses were swift of foot to catch the cow, admirably trained for [Pg 154] running over the rough prairie, often dangerous from badger holes or burrows of the prairie dog, and knowing how to approach the buffalo, and also how to avoid its charge—trained, in fact, just as well as the cow-pony is trained, which knows exactly what is expected of him when he is cutting cattle out of a bunch. The chase was conducted in silence, and the only sound heard was the rumble of a thousand hoofs—dull where the ground was soft, and sharp if it hardened. ”

“ Flour, coffee, and bacon never failed us; and there were times when we had more fresh meat than we [110] could eat. In the buffalo country, of course, we had the wholesome beef of that then multitudinous animal in every possible variety. In the Rocky Mountain region, antelope, prairie-dogs, black-tail deer, jack-rabbits, and occasionally sage-hens gave us an enjoyable change from our staple diet of bacon and bread. The antelope were very wild and timid, and no one thought of chasing them ”

“ Men rode in at night dog-weary, pulled their saddles and hurried stiffly to the cabin where Step-and-a-Half was showing his true worth as a cook who could keep the coffee-pot boiling and yet be ready to pack up and go at the first rifle-shot. They would bolt down enormous quantities of bannock and boiled beef, swallow their coffee hot enough to scald a hog, and stretch themselves out immediately to sleep.
Buddy would be up and on his horse in the clear starlight before dawn, with a cup of coffee swallowed to hearten him for the chilly ride after the remuda. ”

“ With tin-cans, slickers, and much vituperation, they forced the herd up the coulee side and strung them out again on trail. The line-backed cow walked and walked in the lead before Pink's querulous gaze, and the others plodded listlessly after. The gray dust-cloud formed anew over their slow-moving backs, and the cowboys humped over in their saddles and rode and rode, with the hot sun beating aslant in their dirt-grimed faces, and with the wind blowing and blowing. ”

“ We camped about five miles from Abilene, and before I could post myself on cattle values half a dozen buyers had looked the herd over. Men were in the market anxious for beef cattle with which to fill army and Indian contracts, feeders from Eastern States, shippers and speculators galore, cowmen looking for she stuff with which to start new ranches, while scarcely a day passed but inquiry was made by settlers for oxen with which to break prairie. ”

“ Beyond the corral, her nose thrust close against the rails, a cow was bawling dismally. Inside, in much the same position, its tail waving a violent signal of its owner's distress, a calf was clamoring hysterically for its mother and its mother's milk.
Val sympathized with them both; but the cow did not belong in the coulee, and she gathered two or three small stones and went around where she could frighten her away from the fence without, however, exposing herself too recklessly to her uncertain temper. Cows at weaning time did sometimes object to being driven from their calves. ”

“ The Cow goes with Young for Nine Months, and the affection and solicitude she evinces for her offspring is more human in its tenderness and intensity than is displayed by any other animal; and her distress when she hears it lowing, and is not allowed to reach it with her distended udders, is often painful to witness; and when the calf has died, or been accidentally killed, her grief frequently makes her refuse to give down her milk. In a state of nature the cow, like the deer, hides her young in the tall ferns and brakes, and the most secret places ”

“ The promoters of the Abilene market had flooded Texas with advertising matter during the winter, urging that only choice cattle should be driven, yet the information was of little value where local customs classified all live stock. A beef was a beef, whether he weighed eight or twelve hundred pounds, a cow was a cow when over three years old, and so on to the end of the chapter. From a purely selfish motive of wanting strong cattle for the trip, I suggested that nothing under three-year-olds should be used in making up the herd, a preference to be given matured beeves. ”

“ Range-bred cattle are blessed with rugged constitutions and can bear much of cold and hunger. The cow that can turn tail to a biting wind the while she ploughs to the eyes in snow and roots out a very satisfactory living for herself breeds calves that will in time do likewise and grow fat and strong in the doing. He is a sturdy, self-reliant little rascal, is the range-bred calf.
When fifteen hundred head of mixed stock, bearing Northern brands, were in the hands of the day-herders, Park and his crew were detailed to take them on and turn them loose upon their own range north of Milk River. ”

“ It was proved, and is now well known, that the buffalo, in domestication, are easily handled, respect fences, and are but little more difficult to control than domestic cattle; that the male buffalo crosses readily with the domestic cow; that the progeny of the two species are fertile with either species and among themselves. It has also been demonstrated that the cross-bred animal is larger than either parent, and so makes a better beef animal. Besides, its hide yields a [Pg 148] robe which, if not equal to that of the buffalo, is, at least, vastly superior to the hide of the ordinary beef. ”

“ I had brought about fifteen head of cattle with me, and, of course, had a lot of trade goods, so I opened up negotiations with the chief for some ivory. The value of cattle varies right through Africa, depending on the number of sheep in the country. Among the Kikuyu a cow is reckoned to be worth twenty sheep, whilst among the Caramoja and Sambura tribes—whom I visited later—it goes up as high as sixty sheep. I exchanged the cattle at the rate of twenty sheep for each, and when the natives came in with the ivory, I would give, say, the value of twenty sheep for a tusk measuring two hands. ”

“ Before very long, however, they commence to grow darker in color, and I have seen calves in August that at a little distance seemed [Pg 133] almost as dark as the adult buffalo.
The cow is devoted to her calf, and is ready to fight for it against any enemy except man. Usually, in the buffalo chase, the cow, thoroughly frightened, paid no attention to the calf. But, on the other hand, cases have occurred, where men have been capturing calves to rear in captivity, in which the cow refused to desert her offspring, but turned upon the captor of the calf and charged him with the utmost boldness. ”

“ This Bruce affirms that he witnessed in his journey from Masuah to Axum. The Abyssinian, answering, informed us that the soldiers of the country, during their marauding incursions, sometimes maim cows after this manner, taking slices from their bodies, as a favourite article of food, without putting them to death at the time; and that, during the banquets of the Abyssinians, raw meat, esteemed delicious through the country, is frequently taken from an ox or a cow in such a state that the fibres are in motion, and that the attendants continue to cut slices till the animal dies. ”

“ The buffalo, or bison, is the great resource of the trappers of the West. The tongue, tenderloin and brisket are generally preferred, but all the meat is eatable. The flesh of the cow is best. It much resembles beef, but has a more gamey flavor. ”

“ The tongues, when dried, are really superior to those of common beeves, and, indeed, the same may be said of the other parts, but there is a better and worse in buffalo-beef, according to the age and sex of the animal. “Fat cow” is a term for the super-excellent, and by “poor bull,” or “old bull,” is meant a very unpalatable article, only to be eaten by the hunter in times of necessity. ”

“ Telling Congo to stay where he was, the hunter rode to the leeward of the buffalo cow, and, under cover of some bushes, commenced making approach. Knowing that a buffalo cow is easily alarmed, more especially when accompanied by her calf, he made his advances with the greatest caution. Knowing, also, that no animal shows more fierceness and contempt for danger, while protecting its young, he was anxious to get a dead shot, so as to avoid the risk of a conflict with the cow, should she be only wounded. ”
