Calf

“ Much was made of Molly Wood. Old faces and old places welcomed her. Fatted calves of varying dimensions made their appearance. And although the fatted calf is an animal that can assume more divergent shapes than any other known creature,—being sometimes champagne and partridges, and again cake and currant wine,—through each disguise you can always identify the same calf. The girl from Bear Creek met it at every turn. ”

“ Into this unfriendly world, when the painted trilliums and the purple wake-robins were dotting every half-exposed glade, was born a sturdy bull-calf. His sire was a handsome black half-breed Durham which had been brought into the settlement the previous summer for the improvement of the scrubby backwoods stock. The calf was jet-black in colour. As he grew, he soon began to show hints of his sire's broad forehead and massive fore-quarters. ”

His mother and the dam of the speckled calf laid their heads together, and after scenting the air for several minutes, they curved their tails—a thing he had never seen sedate cows do before—and stampeded off to the south. ”

See, for example, the familiar parable of the prodigal son, in which the rejoicing father is mentioned as preparing a great feast in honour of his son's return, and ordering the fatted calf to be killed—the calf in question being evidently one of the animals that were kept in good condition against any festive occasion. ”

“ When calves are caught alive, by placing your hands over the eyes and blowing into the nostrils, in the course of a few minutes they will follow the man who performs this simple operation. In this instance the little heifer got along nicely until two months old, when an aggravated attack of scours set in, but by timely doses of laudanum in a mess of warm gruel, poured down her throat twice a day, for three days, a cure was effected. ”

“ She thinks her calf is over on the other side of that high board fence, in the calf pasture, while in reality it was sold a week ago. You see our master is a merciful man; he separates the mothers from their young almost from the first. For a while he lets the calf through a door in the wall, to its mother, three or four times a day, then twice, and finally not at all; but all the while each is content, because they believe the other is right there. The cow is not worried, and gives down her milk bountifully; the calf is content and thrives. ”

“ THE LITTLE BULL-CALF
AND THE POPPY.
There was once a little calf who was always unhappy. He had a dear mother and two nice little white cousins, with brown ears, and a beautiful field [Pg 6] to live in, quite full of buttercups and daisies, and cow-parsley, which little calves mustn’t eat because it makes them ill, and yet he wasn’t happy. It was really because all the other cows and calves could not understand him. And this was why: this little calf loved everything that was red, and, of course, you know that cows and bulls generally hate red things. ”

“ Besides the Mare and Foal, there is the Cow and Calf, which is very common. A still more happy mother, the Cow and Two Calves, was, in 1762, a sign near Chelsea Pond; whilst a touching picture of paternal bliss might have been seen on a sign in Islington in the last century, viz., the Bull and Three Calves; that animal, doubtless, was placed there in the company of his offspring, to illustrate the homely old proverb, “He that bulls the cow must keep the calf.” ”

“ The calf sucks, thinking it has a teat, and pretty soon it butts violently—as calves do to remind their mothers to let down the milk—and the boy’s wrist gets barked against the jagged edge of the bucket. ”

“ On the night of the fourth day he said to the [Pg 137] people, “To-morrow the buffalo will come again, and you will make another surround. Be careful not to kill a yellow calf—a little one—that you will see with the herd, nor its mother.” This was in winter, and yet the calf was the same color as a young calf born in the spring. They made the surround, and let the yellow calf and its mother go.
A good many men in the tribe saw that this man was great, and that he had done great things for the tribe, and they made him many presents, the best horses that they had. ”

“ According to all races familiar with the negro, a calf like a shut fist planted close under the ham is, like the "cucumber shin" and "lark heel", a good sign in a slave. Shapely calves and well-made legs denote the idle and the ne'er-do-well. ”

“ Veal ought to be fine in the grain, firm, white, and fat. The leg bone should be small. If fresh, the eyes will be full and bright, the flesh not clammy but dry, and the large vein of the shoulder of a bright red. The kidney taints soonest, and if that be sweet, and neither soft nor slimy, the whole calf is fresh. On the contrary, if any part of the flesh be green or yellow, or feels flabby, it is stale. The fillet of a cow-calf is preferable on account of the udder, but the meat of the bull-calf is generally firmest, whitest, and best, when dressed. ”

“ Frozen fish are piled in heaps like stove-wood, and frozen cabbages are rolled around like cannon-shot. A calf stands in front of a butcher's stall in the attitude of walking away, but an examination shows that he is hard as a stone, and may have been standing there for weeks. ”

“ The Yearling.—During the first five months of his life, the calf changes its coat completely, and becomes in appearance a totally different animal. By the time he is six months old he has taken on all the colors which distinguish him in after life, excepting that upon his fore quarters. The hair on the head has started out to attain the luxuriant length and density which is so conspicuous in the adult, and its general color is a rich dark brown, shading to black under the chin and throat. ”
