“ But there will not be seventy-four fruits; some of the flowers are small and weak; others, as the petals fall, show unmistakable signs of failing. A few of them show the plump form of an embryo apple: I think there are a score of such promises. But I know that others will fail later from physiological causes, and others probably from onslaught of insects or disease or from accidents. If six fair fruits mature on a branch like this, the crop will be good; and probably the branch would not have vigor enough to set as many fruit-buds the following year or to bear as many fruits. ”

“ IN a very large number of cases the diffusion of seeds is effected by animals. To this class belong the fruits and berries. In them an outer fleshy portion becomes pulpy, and generally sweet, inclosing the seeds. It is remarkable that such fruits, in order, doubtless, to attract animals, are, like flowers, brightly colored—as, for instance, the cherry, currant, apple, peach, plum, strawberry, raspberry, and many others. This color, moreover, is not present in the unripe fruit, but is rapidly developed at maturity. ”

“ When ripe, they are easily peeled, and well repay the trouble, the spines being then much less obdurate than when green. The mature fruit is of a deep, dull, coppery red color, and in flavor is equal, if not superior, to any of the red varieties which I have eaten in England. I have often wondered whether cultivation might not remove the spines from the berries, or, that failing, whether a seedling could not be raised from them which would give us a berry far more reliable than any good gooseberry we now have. ”

“ If our market is one in which strawberries are sold simply as such, without much regard to flavor or size, there is not the same inducement to produce fine fruit. But even when quantity is the chief object, deeply prepared and enriched land retains that essential moisture of which we have spoken, and enables the plant not only to form, but also to develop and mature, a great deal of fruit. In the majority of markets, however, each year, size and beauty count for more, and these qualities can be secured, even from a favorable soil, only after thorough preparation and enriching. ”

“ The fruits of the temperate regions that we are able to grow include the apple, pear, plum, prune, quince, apricot, Persian peach, nectarine, almond, walnut, chestnut, cherry, &c., as well as some of the hardier fruits which I have classed as semi-tropical—viz., the Japanese plum, persimmon, Chickasaw plum, strawberry, &c. ”

“ Judging from last season, we [Pg 281] expect a large crop of fine fruit from them next September, as well as a great quantity of new plants.
Apples are in a very satisfactory condition. I need to say but little about varieties. All kinds of bearing size bloomed full, and most kinds have set full of fruit. Of such kinds as Okabena, Duchess and Wealthy, it looks as though practically every blossom turned into an apple.
We received several seedling apple trees from Mr. Chas. Haralson, of the State Fruit-Breeding Farm. They were all set out, and all are growing. ”

“ But even in plants where the flowers are alike, the fruits often differ conspicuously, because fresh principles come into play for the dispersion and safe germination of the seed. This makes the study of fruits the most complicated part in the unravelling of plant life. After the strawberry has blossomed, the pulpy receptacle on which it bore its green fruitlets begins to swell and redden, till at length it grows into an edible berry, dotted with little yellow nuts, containing each a single seed. ”

“ Such may be found occasionally in the native persimmon, in certain grapes, and in many apples; but in the strawberry, blackberry, and raspberry, the berry which constitutes our desirable fruit, never swells unless the germs have been impregnated and the seeds perfect. In the stone-fruits the stone or pit is always developed, but the enclosed seed is often imperfect from want of impregnation or other cause—and yet the fleshy covering will sometimes swell and ripen. ”

“ Strictly speaking, the small seeds scattered over the surface of the berry are the fruit, and it is to perfect these seeds that the plants blossom, the stamens scatter, and the pistils receive the pollen on the convex receptacle, which, as the seeds ripen, greatly enlarges, and becomes the pulpy and delicious mass that is popularly regarded as the fruit. So far from being the fruit, it is only "the much altered end of the stem" that sustains the fruit or seeds ”

“ Remove the runners as they appear, and the life of the plant goes to make vigorous foliage and a correspondingly large fruit bud. The sap is stored up as a miller collects and keeps for future use, the water of a stream. Moreover, a plant thus curbed abounds in vitality and does not throw down its burden of prematurely ripe fruit after a few hot days. It works evenly and continuously, as strength only can, and leisurely perfects the last berry on the vines. You will often find blossoms and ripe fruit on the same plant—something rarely seen where the plants are crowded and the soil dry. ”

“ It is a common thing for us to send to the States for choice fruit, and the pomologist who receives our orders cuts off scions from the best fruit trees, and sends to us the summer, the fall and the winter apples, and we also get the pear, the plum, the cherry and the peach. We graft those various kinds of good fruit into our seedlings, and then the tree produces fruit according to the kind that was grafted into it, and in this way we procure good fruit. ”

“ In the case of the attractively coloured fruits, it is curious to observe how the seeds are always of such a nature as to escape destruction when the fruit itself is eaten. They are generally very small and comparatively hard, as in the strawberry, gooseberry, and fig; if a little larger, as in the grape, they are still harder and less eatable; in the fruit of the rose (or hip) they are disagreeably hairy; in the orange tribe excessively bitter. When the seeds are larger, softer, and more eatable, they are protected by an excessively hard and stony covering, as in the plum and peach tribe ”

“ The luxuriance of the peach, the plum, the pear and the apple, is such, in this region, as to afford the most perfect possible specimens. The vigor of fruit-trees, in such a soil and under a heaven so congenial, produces fruits which are very large without being coarse-fleshed; the flavor concentrated, and the color very high. It is the constant remark of emigrants from the East, that our apples surpass those to which they have been accustomed. ”

“ Fruit trees, like shade trees, are not the growth of a summer. Therefore there is natural eagerness to have them in the ground as soon as possible, and they can usually be ordered from the same nursery, and at the same time with the ornamental stock. I shall speak first of apples, pears, and cherries, and I have been at some pains to secure the opinions of eminent horticulturists as to the best selections of these fruits for the home table, not for market. When there is a surplus, however, there will be no difficulty in disposing of the fine varieties named. ”

“ A fruit, on the other hand, lays itself open in every way to attract the attention of animals, and so to be dispersed by their aid, often amid the nourishing refuse of their meals. It is true that, with the fruit as with the nut, to digest the actual seed itself would be fatal to the life of the young plant. But fruits get over this difficulty by coating their seeds first with a hard, indigestible shell, and then with a soft, sweet, pulpy, and nutritious outer layer. ”

“ The greater part of the ovules prove abortive, but those that ripen retain their calyx, though they remain embedded in the pulp. The proportion of ripe seeds is very small compared to the size of the eatable part of the bread-fruit; frequently only four or six seeds are found in a globe eight inches in diameter; and many fruits produce no seeds at all. One variety, in particular, is always without seeds. The fruit, when used, is generally put into an oven or before a fire, and when the rind turns black, it is scraped off, and the pulp is found to resemble the crumb of new bread. ”

“ A want of care in this matter of handling fruit is, no doubt, the chief reason for the popular preference of red apples in our markets, since those, that are well covered with a deep color, do not show the bruises that are so unseemly upon the fair cheek of the lighter colored varieties.
The modes of keeping winter fruits are exceedingly various, and some of them are quite primitive. The desiderata are coolness and dryness, which should not be carried to the extent of freezing, nor of desiccation. ”

“ They may say that no pruning is better than such mutilation, and with some varieties of fruit, they may have a show of reason on their side, as there are many sorts that will very naturally produce an open head, every where provided with abundant fruit-spurs, which are the great desiderata of the fruit-grower. ”

“ In many books on fruit-culture much space has been given to dwarf pears, apples, and cherries, and trees of this character were planted much more largely some years ago than they are at present. The pear is dwarfed by grafting it on the quince; the apple can be limited to a mere garden fruit-tree in size by being grown on a Doucin stock, or even reduced to the size of a bush if compelled to draw its life through the roots of the Paradise. These two named stocks, much employed by European nurserymen, are distinct species of apples, and reproduce themselves without variation from the seed. ”

“ Any member of the citrus family, whether citron, shaddock, orange, lemon, or lime, may be raised from seeds with the greatest ease, and every seedling plant will become fruitful when of a proper age to produce fruit, provided it has the advantage of proper management. As a matter of course, a large proportion of the pretty little seedlings we meet with in ladies’ plant houses and window gardens are not properly managed, and are not likely to live to a fruit producing age. ”

“ Every one knows the great difference in the manner of growth, in the foliage, flowers, and especially in the fruit, between the almost innumerable varieties of the apple. The pips or seeds (as I know by comparison) likewise differ considerably in shape, size, and colour. The fruit is adapted for eating or for cooking in different ways, and keeps for only a few weeks or for nearly two years. Some few kinds have the fruit covered with a powdery secretion, called bloom, like that on plums; and "it is extremely remarkable that this occurs almost exclusively among varieties cultivated in Russia." ”

“ The fruit, a kind of berry, which, towards the time of its ripening, though that seldom happens among us, is first of a brownish colour, and then black, contains a round seed. The roots grow sometimes to the thickness of one’s finger, push themselves deep into the earth, are surrounded by many small fibres, have a yellowish-red pith, and are covered with a black bark or rind. This plant grows wild in the Levant, as well as in Italy, the southern parts of France, and in Switzerland. The cultivated kind is well known, and is propagated with much advantage in various countries of Europe. ”

“ Wild plums are also common, and frequently brought to market. The large purple flower of the rose-raspberry yields a fruit of a beautiful color and pleasant, acid taste, but it is seldom eaten in quantities. Wild grape-vines are very common, and formerly the fruit used to be gathered for sale, but of late years we have not seen any. All these lesser kinds of wild fruits, strawberries, raspberries, blackberries, and whortleberries, are gathered, to a very great extent, for sale; women, children, and occasionally men also, find it a profitable employment to bring them to market ”

“ The harvest begins as soon as one or two berries at the base of the spikes begin to turn red, and before the fruit is mature, but when full grown and still hard, if allowed to ripen, the berries lose pungency, and ultimately fall off and are lost. ”

“ The fruits now thriving are the grape, fig, peach, almond, apple, pear, strawberry, sloe, plum, several varieties; olive, the common and white mulberry, pine apple, plantain, sugar cane, Cape gooseberry besides these, there are several others that will ripen here, which, in colder countries, never come to perfection ”

“ The gradual change in customs, whereby the eating of the apple (rather than the drinking of it) has come to be paramount, is a significant development; the use of apple-juice may now proceed on another basis, on the principle of preservation and pasteurization rather than of fermentation.
It is the custom to call the apple Pyrus Malus. This is the name given by the great Linnaeus, with whom the modern accurate naming of plants and animals begins. The nomenclature of plants starts with his "Species Plantarum," 1753. ”

“ This fruit is remarkable for having almost every good quality of tree and fruit and being notwithstanding a third-rate apple. The tree is hardy, its bloom, from peculiar hardiness, escapes injury from frost, and even a second set of blossoms put out, though feeble ones, if the first are destroyed. The fruit is comely, cooks admirably, keeps well; but a certain sharpness and coarseness will always make it but a second or third-rate fruit. No tree is sought by farmers in this region, with more avidity. ”
