Palette knife

Definition and stakes

Mary Elizabeth Hall,  Candy-Making Revolutionized: Confectionery from Vegetables

“ A knife which is of almost constant use in making decorative candies and which is particularly satisfactory for lifting small forms is a palette knife such as artists use for mixing their colors. It is thin, flexible and sufficiently sharp for cutting fondant. Also the blade lends itself to use in many different positions because its curved shape allows the hand a degree of freedom not possible with the ordinary knife. The palette knife is much better for freeing or lifting forms from a flat surface than a spatula or a case knife. ”

Daniel Burleigh Parkhurst,  The Painter in Oil

“ It should have the same even elasticity that a brush should have.
For painting you need a "trowel palette-knife," which has a bent shank, making the blade and the [Pg 72] handle on different levels, so that as you press the blade to the canvas, the fingers are kept away from the painted surface. The shank should be round, and the blade very fine and flexible. The knife should balance nicely in the hand, and turn freely in the fingers, so that you can paint with either face of the blade with equal balance. It takes some care to pick out a good trowel-knife, as a poor one is worse than none.

Ethel R. Peyser,  Cheating the Junk-Pile: The Purchase and Maintenance of Household Equipments (1922)

“ With knives like the corrugated types, there are often metal wire handles drawn out on them. The corrugations on these blades are to obviate tearing and reduce, some think, the pressure necessary in cutting.
Handles themselves are made of various things,—woods, rubberoid, celluloid, metals, stag and in the case of table knives, mother-of-pearl, shell, silver over nickel, etc.
The kitchen knife handle must be able to stand all heats, be impervious to hot water, be smooth and comfortable in shape, and must be nicely finished so as to give the worker a feeling of worth-whileness in his job.
