“ Have two well buttered and floured pastry baking-pans ready, place the preparation in the bag, then gently press it down in each pan, giving small round forms the size of fifty-cent pieces and half an inch apart from one another; when all in the pans, evenly sprinkle over them four ounces of powdered macaroons and lightly dredge them with powdered sugar. Place one pan in the hot oven to bake for fifteen minutes. ”

“ Cut up the butter into the pan of flour. Add the milk and sugar gradually, and then the beaten egg, and then the lemon; next the yeast. Stir the whole very well, and set it to rise in a buttered pan. Place it near the fire, and cover it with a clean flannel or a double cloth. When it has risen and is quite light, and is cracked all over the surface, transfer it to a square baking pan, put it immediately into the oven, and bake it well. When cool, either ice it or sift white sugar over it, and cut it into squares. Or, you may bake it in a round loaf, or in small round cakes. ”

“ You can fry bread on the top of stone: when one side is baked stand the pan on edge by the side of the stone and allow baking to proceed in that way.
Remember that small cakes and biscuits must be baked quickly before a hot fire whereas large loaves, such as johnny cake, must have a slow even heat so as to get done through. The secret of the camp oven is the envelope of hot air which must not be too hot and must be kept even. Below are given the recipes which are most successfully used with the frying pan baker. Whole wheat flour makes easier than white and has more taste.
