Chafing dish

Portrait of Walter Lionel George Walter Lionel George,  A Bed of Roses

“ Painted pale blue, it flaunted a plate glass window full of cakes, packets of tea, pounds of chocolate, jars of sweets; some imitation chops garnished with imitation parsley, and a chafing dish full of stage eggs and bacon held out the promise of strong meats. Enormous urns, polished like silver, could be seen from the outside emitting clouds of steam; under the chafing dish too came up vaporous jets. ”

“ The dishes most suitable for chafing-dish cooking are stews, eggs, and cheese. Stews can be modified in a great variety of ways, the barbecue being a favorite one. The simplest way of cooking in a chafing-dish is to put a little butter in the dish, and when it bubbles add oysters, mushrooms or any article which makes its own liquor; this lacking, a little water or milk is added, and seasoning to taste.
Canned chicken, tongue, salmon, crabs, and shrimps make good dishes and are easily prepared. Paprica, a kind of red pepper, is especially good for use in chafing-dish cookery instead of cayenne.

Frank Schloesser,  The Cult of the Chafing Dish (1904)

“ Chaffinda can tackle it, and in this wise. It is an old Cornish version. There may be others, but there can be none better. The dish needs cabbage, and it is most practical to get a young fresh cabbage, boiled, pressed, and chopped into shreds before you begin the actual cooking. It saves time and trouble. Put a tablespoon of butter in the Chafing Dish, also one chopped onion, and the cabbage. Let it frizzle and absorb the butter. Just before boiling, add gradually a cupful of milk, pepper and salt. As soon as it boils up, take it off and put it aside in a hot dish. ”
