Cocoanut

“ Native attendants soon produced clusters of cocoanuts, with the crowns of their heads knocked off, ready for consumption. We made cocoanut-milk punch—every man his own punch-bowl; with a sprinkle of lime-juice, and syrup of powdered sugar-cane—gently agitated within the milky shells—which made as delicious a beverage as ever a regent brewed: it is worth a trip to Polynesia alone to enjoy it. ”

“ A great messenger of life, and one of the most transportable, is the solid cocoanut. Not only does it travel well, but, when thrown upon shoal or rock, if it find only a little poor white sand, which would support nothing else, the cocoanut contents itself there, finds brackish water not a jot less agreeable than the freshest; germinates, thrives, grows into a robust cocoa tree. ”

“ In some, which with care would rear the cocoanut, the eastern palms prevail, a few of which, rising to their full growth, spread their seeds with the wind, which in a succession of time cover the whole extent with plants, that strangling one another by their multitude, remain stunted, and create the stubbornest of thickets. ”

“ The cocoanut tree springs up everywhere, but in the spots where yams and taros are grown the sand is hollowed out, and a pit formed, from one to two hundred yards long, and of varying width, into which decaying cocoanut leaves and refuse are thrown, till a rich soil is formed. [1] It is certain, however, that among the Polynesians the cocoanut is a cultivated plant no less than the yam, taro, sweet-potato, sugar-cane, banana, breadfruit and numerous other species found in use throughout the tropical islands of the Pacific. ”

“ The plantain, the mangrove, the dark, glossy, broad leaf of the breadfruit are almost the only varieties of foliage we have in contrast with the ever-present cocoanut, which casts its shadow on the ground with a central stem of light, instead of shade, running through the immense frond. The population of Ceylon is twelve times as dense in the western as in the eastern provinces, and all the inhabitants of the coast are supported by the cocoanut. ”

“ The infant is swung to sleep in a rude net of coir-string made from the husk of the fruit; its meal of rice and scraped cocoanut is boiled over a fire of cocoanut shells and husks, and is eaten off a dish formed of the plaited green leaves of the trees, with a spoon cut out of the nut-shell. When he goes a-fishing by torchlight his net is of cocoanut fibre; the torch, or chule is a bundle of dried cocoanut leaves and flower-stalks; the little canoe is the trunk of the cocoa-palm tree, [Pg 132] hollowed by his own hands. ”

“ Flowers and fruit in all stages of ripening grace the crown at all times of the year. The young cocoanut contains the delicious, cooling milk, and the soft pulp, a nourishing article of food. The mature nut is an excellent substitute for meat, as the kernel contains more than seventy per cent, of a fixed, bland, nutritious oil. The tree bears fruit in from seven to eight years from the time of planting, and its lifetime is from seventy to eighty years. Its greatest ambition during youth is to reach the clouds and equal its oldest neighbors in height. ”

“ Grate one good-sized cocoanut, mix half of it with the custard and fill into the two crusts. Spread over the tops of the two pies the stiffly beaten whites of the three eggs to which you have added a small quantity of sugar. Over this sprinkle the remaining half of the grated cocoanut, stand in the oven a few minutes, until top of pie is lightly browned. ”

“ The structure of the cocoanut seems well fitted to endure winds of almost any force, and that a remarkably abundant and strong circulation [18] of air is essential to its best development is well shown by comparing a tree subjected to it with the wretched, spindling specimen growing in a sheltered glen or ravine. ”

“ COCOANUT DIAMONDS. 6 pounds glucose,
2 pounds sugar,
Water to dissolve same.
Cook to 242°; set off on a barrel and add all the fine powdered cocoanut you can possibly stir in; flavor vanilla, and pour on a dry, clean slab; roll it out with a rolling-pin the height of the bars; when cold, mark with a caramel cutter, straight one way and on the angle the other; this will allow you then to get them in the shape of a diamond. When they are cut, throw them in a sieve [30] and throw granulated sugar over them, shake the sieve until sugar is out and they are ready for the store. ”

“ The two weeks' experience on board the transports had made the finding of cocoanuts an event to be noted, and the dry pulp and strongly flavored milk of this tropical fruit became extremely grateful to the palate, even if not altogether safe for the stomach. If ripe, however, the cocoanut could scarcely be more ungenial to many, than the raw, canned tomatoes upon which they had in part subsisted during the voyage. It is to be added that this report of the finding of the cocoanuts is not the report of an old soldier, but of a young and intelligent, first enlistment man. ”

“ Copra and Cocoanut Oil. Until very recent years the demand for the “meat” of the cocoanut or its products was limited to the uses of soap boilers and confectioners. Probably there is no other plant in the vegetable kingdom which serves so many and so varied purposes in the domestic economy of the peoples in whose countries it grows. Within the past decade chemical science has produced from the cocoanut a series of food products whose manufacture has revolutionized industry and placed the business of the manufacturer and of the producer upon a plane of prosperity never before enjoyed. ”

“ The natives have a saying that the cocoanut palm loves the sound of the human voice, and, [514] like the magpie and robin, will not flourish away from the habitations of men. Like the palmyra palm in the north of Ceylon, the cocoanut in the south yields most of the necessaries of life. Its fruit furnishes food, its shell drinking vessels, its juice palm wine and sugar, its stem materials for building, its leaves roofs, matting, baskets and paper. ”

“ Each, as it falls, leaves a ridge upon the trunk, which assists the climber in reaching the fruit. The blossoms of the cocoanut spring from the trunk and open amid the bases of the lower leaves; as the tree sends forth a succession of blossoms every few weeks, the fruit is found upon it in every stage of maturity at the same time, from the blossom and the cluster of pretty little green nuts not larger than plums, to the full-grown fruit as large as a man's head, hanging from a tough stalk and ready to be plucked. ”

“ The progressive German colonist of Kamerun, German East Africa, and the South Pacific Islands, as well as the French in Congo and Madagascar, are vigorously practicing conventional, modern orchard methods in the treatment of their cocoanut groves, and it is amazing to read of discussions between Ceylon and Indian nut growers as to the best method of tethering cattle upon cocoanut palms in pasture, so as to obtain the most benefit from their excreta. ”

“ Indeed, to take away from Southern India and Ceylon its cocoanut-trees, would inflict upon multitudes a most severe calamity; hence, their owners guard them most carefully, and on no account destroy them until they grow old and of little value except for timber. They are rented out at so much a tree, and sometimes a single tree will be the property of two or more persons. Commonly, the cocoanut-palm is planted in topes or groves, covering a large surface of ground, and arranged in parallel lines, so as to form lanes completely shaded by their uniting leaves. ”

“ The stem is so strong and tough, being composed of closely-interwoven fibres, 96that the entire top may be torn off by the hurricanes and the trunk remain uninjured. The cocoanut commences to bear when from three to ten years old and will continue to produce fruit, year after year, for from seventy-five to one hundred years. The nut is used for both food and drink, and the shell is made into dippers, jars, spoons and other household utensils. The dried cocoa is a valuable article of commerce, but the real value of the oil prepared from the fresh meat is only beginning to be realized. ”

“ Have ready a saucepan of salted boiling water, put in the cucumber, cook gently until three-quarters done, then drain well. Break the cocoanut in half, saving the milk from the inside, and scrape or chop the white part of the nut finely. Pour 1⁄3 of a pint of boiling water over the cocoanut, let it stand for 20 minutes, then strain off the liquid, and put it aside. Cover the grated nut again with 1⁄3 of a pint of boiling water, let it remain for at least 1⁄2 an hour, then strain through fine muslin 2 or 3 times, squeezing the nut well each time. ”

“ In cocoanut, the orange recognises a fellow exile, and the two, coming together, yield a new flavour, a new delight. For this purpose, the orange must be cut that the juice may flow, and if in symmetrical rounds, the effect will be more satisfying to the critical. Let the slices be laid at once in the bowl destined to hold them at the moment of serving, that not a drop of juice may escape, and arrange them so that over every layer of orange reposes a layer of sugar. ”

“ Desiccated cocoanut makes a nice change if Cocoanut Cake is desired, or, if you do not mind the trouble of grating it, the fresh cocoanut is of course superior. After the cake is baked brush the top over with a little white of egg and scatter some of the cocoanut upon it.
Twelve delicious little Rice Cakes may be made by taking one egg and its weight in sugar and butter, half its weight in ground rice and half in wheaten flour. ”

“ The cocoanut is considered one of the most sacred fruits, and is called Srîphala, or the fruit of Srî, the goddess of prosperity. It is the symbol of fertility, and all through Upper India is kept on shrines and presented by the priests to women who desire children. One of the main causes of the respect paid to it seems to be its resemblance to a human head, and hence it is often used as a type of an actual human sacrifice. ”

“ That the cocoanut will grow and thrive upon the immediate seashore, in common with other plants, is simply an indication of its adaptability to environment. That it is at a positive disadvantage as a shore plant may be determined conclusively by anyone who will examine the root system of a seashore-grown tree upturned by a wash or tidal wave, and one uprooted from any cause, farther inland. ”

“ But well that it does, for the combination pleases the palate no less than the eye. The orange summons forth the most excellent qualities of the cocoanut; the cocoanut suppresses the acidity and crudeness of the expatriated orange.
With sugar alone, the orange—of this secondary order be it remembered—comes not amiss, when the soul yearns for placidness and peace. If more stirring sensations be craved, baste the cut-up oranges and sugar with Cognac, and eat to your own edification. Again prepare some hours before serving, and be not stingy with the Cognac: keep basting constantly ”

“ Fresh Cocoanut is another ingredient frequently used in making curries. This gives a delicious flavor and also adds greatly to the nutritive value. A cocoanut paste is prepared by a very elaborate process in the Indian cook-house, but in this country we are not only confronted by the problem of living on our so many dollars a month, but also by the equally great one of living on twenty-four hours a day. ”

“ Tapping the nuts with their fingers, they know by the sound those which are fit for food. They prefer the young nuts, in which the milk is as clear as spring water, and the flesh of the consistency of cream. When a cocoanut has lain on the ground a short time, a shoot emerges from one of its three eyes and enters the ground. A cord connects it with the nut, and supplies half the nourishment of the young plant till it is 60strong enough to draw all it requires from the ground. The tree and its products are put to such an infinite variety of uses that without it the natives would be badly off. ”

“ As for occasional baskets or panniers made of a cocoanut leaf, or the little bonnets of the same material which they wear to shade their eyes from the sun, every one knows how to make them at once. As soon as the sun was pretty high, the women who had been with us since morning, generally sent out for cocoanut leaves, of which they made such bonnets in a few minutes, and threw away as soon as the sun became again low in the afternoon. ”

“ I often watched the natives climb the tall cocoanut trees, about eighty feet high, with only the fine fern-like leaves at the extreme top. These trees yield twenty to fifty cocoanuts per month and live to a great age. No one can have any idea of the delicious milk until he has drunk it fresh from the recently gathered nuts. A young native will climb as nimbly and as swiftly as a monkey, and will be as unfettered by dress as his Darwinian brother. The fruit is severed from the tree by the useful bolo. ”

“ The cocoanut tree has a characteristically Oriental aspect and a natural grace, but it is not well suited to the ornamental garden or the princely villa. It is too suggestive of the rudest village scenery, and perhaps also of utilitarian ideas of mere profit, as every poor man who has half a dozen cocoanut trees on his ground disposes of the produce in the bazar. ”

“ They make their houses and furnish them from it, they get food and drink from it, for the milk of the cocoanut is a very pleasant beverage, and they use the oil to light their abodes at night. No wonder the people value this noble tree very highly. ”

“ But 'the cocoanut-palm is the most valuable of Nature's gifts to the inhabitants of those parts of the tropics where it grows, and its hundred uses, as they are not inaptly called, extend beyond the tropics over the civilized world. ”

“ The cocoanut, when used for milk by these Southern people, is cut quite green, before the solid meat has formed and when all is liquid within, and is said to be most healthful. Of our party, the adventurous man and children liked it very much, but the cautious woman a very little. Then we made our adieux, not without the promise, however, that the señor would meet us at three o’clock for the trip up the Ozama River in the ship’s boats. ”
