"THERE'S A BOWER OF BEAN-VINES"
There's a bower of bean-vines in Benjamin's yard,
And the cabbages grow round it, planted for greens;
In the time of my childhood 'twas terribly hard
To bend down the bean-poles, and pick off the beans. ”

“ Navy or Kidney Bean, extensively grown in the United States, over one hundred and fifty varieties of which are in cultivation as a garden vegetable, “string beans,” fodder and for food. The closely related “frijole” is universally grown in Mexico and Spanish American countries where it ranks next to maize as a staple food. Soy Bean, the common bean of China and Japan is grown in immense quantities. Various preparations form a part of the daily food. It is now grown in Europe and southern and southwestern United States as forage and soiling crop. ”

“ Field-Beans.—For general culture there are three varieties of white—small, medium, and large. Of all known beans, we prefer the medium white. The China bean, white with a red face, is an early variety. All ripen nearly at the same time. It cooks almost as soon as a potato, and is good for the table; but it is less productive, and less saleable because not wholly white. For planting among corn, as for a very late crop, this bean is valuable, because it matures in so short a time. Good beans may be raised among corn, without injury to the corn-crop. ”

The ground is enriched by 400 or 500 pounds of complete fertilizer, and the beans are planted with a grain drill, using every fourth tube. The culture is by horse-power, and the vines are pulled by hand or by means of a bean-harvester, and threshed with a flail or grain thresher. These white grocery beans are sold everywhere in large quantities.
Cultivation.—All bean cultivation should be shallow. Nothing is gained by cutting the feeding roots. ”

“ The Climbing French Bean is especially useful for producing crops under glass in spring and autumn, and the plants do well when grown in narrow borders with the vines trained close to the roof-glass by means of wire or string to which the growth readily clings. The general treatment may be much the same as that recommended for the Dwarf varieties, special care being taken with regard to watering and the giving of air. ”

“ After the bean is planted the heart or germ inside starts to sprout, and sends the root downward. At the same time the leaves begin to grow upward and they take with them the outside husk of the bean which is of no more use. ”

“ Through Piedmont, Lombardy, the Milanese, and Genoese, the garden bean is a great article of culture; almost as much so as corn. “ Taking the Crop.—The pods should be gathered for use when the seeds are comparatively young, or when they are of the size of a marrowfat-pea. As a general rule, all vegetables are most tender and delicate when young; and to few [Pg 505] esculents does this truth apply with greater force than to the class of plants to which the English Bean belongs.
Use.—The seeds are used in their green state, cooked and served in the same manner as shelled kidney-beans. The young pods are sometimes, though rarely, used as string-beans. ”

“ Beans are not full of food and goodness for you and me to eat, but for the little baby bean plant to feed upon. And so if we choose a large seed, we have chosen a greater amount of food for the plantlet. This little plantlet feeds upon this stored food until its roots are prepared to do their work. So if the seed is small and thin, the first food supply insufficient, there is a possibility of losing the little plant. ”

“ In Sicily and Tuscany, girls who desire a husband learn their fate by means of Beans, in this fashion:—They put into a bag three Beans—one whole, another without the eye, a third without the rind. Then, after shaking them up, they draw one from the bag. The whole Bean signifies a rich husband; the Bean without an eye signifies a sickly husband; and the Bean without rind a husband without a penny.——The French have a legend, of one Pipette, who, like our Jack, reaches the sky by means of a Bean-stalk. ”
