“ I always said this country would do for dairy farming, though it takes more money, of course, to start a dairy farm than it does just to plant crops. The cows ain't all of it, you know. You ought to raise your own hay and the corn you need for silage. Borrow money, too, if you haven't got it, to drain and tile your fields. It will pay you back in the long run, for I doubt if you will get any good clover until you put ditches in your land. ”

“ In the management of the dairy, an ice-house and a good quantity of ice for summer use are not only very convenient for regulating the temperature of the dairy-room, and for keeping butter at the proper consistence, and preserving it, but are also profitable in other respects. The advantages of dairying call out, among other things, enhanced revenues, because butter and cheese have become necessities; it enriches the farm, and is perfectly adapted to foster the breeding and raising of better and more stock. ”

“ The city milk supply comes from a large number of farmers who produce milk as a side issue. The methods of feeding and caring for cattle on these farms is in the main contrary to the instructions given by the dairy department at the State Farm. The men who made dairying a business here were learning and following agricultural college methods. They had good grade dairy cattle and produced fully twice as much per cow as do the farmers now in the business. ”

Previously to the enormous development of the urban trade in country milk, dairy farms were in the main self-sustaining in the matter of manures and feeding-stuffs, and the cropping of arable land was governed by routine. To-day, on the contrary, many dairy farms are run at high pressure by the help of purchased materials,—corn, cake, and manure,—and the land is cropped regardless of routine and independent of courses. ”

“ If for working oxen and horses, I would let it stand till a little out of the blossom; but if to feed out to new milch cows in the winter, I would prefer to cut it very green. It is then worth for the making of milk in the winter almost double that cut later.” Every farmer knows the milk-producing properties of rowen, which is generally cut before it blossoms.
No operation on the farm is of greater importance to the dairyman than the cutting of his grass and the manner of curing hay, and in this respect the [187] practice over the country generally is susceptible of very great improvement. ”

“ The business of the dairy, like the feeding of hogs and poultry, is originally carried on as a save-all. The cattle necessarily kept upon the farm produce more milk than either the rearing of their own young, or the consumption of the farmer's family requires; and they produce most at one particular season. But of all the productions of land, milk is perhaps the most perishable. In the warm season, when it is most abundant, it will scarce keep four-and-twenty hours. The farmer, by making it into fresh butter, stores a small part of it for a week ”

“ Quite possibly the presence of the springs was decisive in enabling both the Mosses and Fountain Beattie to make dairying a substantial part of the farm’s operations. In the 1830’s, many of the types of equipment and utensils typically used in making and preserving butter, cheese, and fresh milk were listed in inventories of personal property at the farm. During this period and later, the presence of the Little River Turnpike would have made it feasible to sell dairy products regularly in Alexandria, six miles away, and in the District of Columbia, nine miles away. ”

It is probable that, in this way, a gradual improvement of the soil on such farms has been effected, and the corn-growing soils of distant countries are adding to the store of fertility of soils in the British Isles. ”

“ Large tracts of country about here once laid out for arable are now converted into grazing grounds, for the number of cattle is yearly on the increase. Dairy-farming is found to be more profitable and less risky than the raising of wheat and barley in a land where one night of frost sometimes destroys the result of a whole year's patient care and labour. The land is cleared for cultivation by felling and burning, and it is then ploughed in primitive fashion and sown, but only one harvest is generally gathered on one spot. ”

“ One of our Irish societies already supplies electric light for the town it works in. In the organized rural community the eggs, milk, poultry, pigs, cattle, grain, and wheat produced on the farm and not consumed, or required for further agricultural production, will automatically be delivered to the co-operative business centre of the district, where the manager of the dairy will turn the milk into butter or cheese, and the skim milk will be returned to feed the community's pigs. ”

“ Milch Cows.—When dairy-farming is conducted on pure pastures, the cows are altogether dependent upon the grasses; and in winter, the animals suffer much from scarcity of food. This is the very worst system of cow-keeping, but it is prevalent amongst many small farmers in Ireland, and is to be met with even in England and Scotland. I am strongly of opinion that it would be far more economical to keep cows (and other cattle) altogether in the house, and feed them with cut grass, than to allow them to remain out altogether in the field. ”

“ In some parts of the country few other cows are kept; but they are not so hardy as many other breeds, they do not yield the large quantity of milk, and are therefore not great favourites with dairy farmers. The quality and wholesomeness of the milk depends greatly on the food and home of the animal. Large numbers of cows are kept in confined, ill-ventilated buildings, and are fed upon brewers' grains, so that the milk is thin and poor, and unfit for food. Milk from an animal in a state of disease cannot but produce ill health to the consumer. ”

“ As a rule, it may be said to be the duty of every dairyman to breed from the best blood obtainable, and to rear the heifer calves from his best cows. Unless this condition is fulfilled, the dairy as a whole must run down. It is only by constant care and breeding from the best that the present status can be maintained, and possibly a little progress made. It should be the ambition of every dairyman to constantly improve the value of his herd, and to make progress in every department of his dairy, while improving the quality of his product. ”

“ A peculiar feature of the dairy industry is the fact that it is constantly moving. The dairy herds begin to pasture in the lowlands as soon as the snow melts, and as fast as the snow line recedes up the mountains the cattle follow. The milk is converted into butter and cheese wherever the herds may be, and the second crop of grass below them is cut and cured for winter forage. ”

“ We want cattle for distinct purposes, as for milk, beef, or labor. In a large majority of cases,—especially in the dairy districts, comprising the Middle and Eastern States, at least,—the farmer cares more for the milking qualities of his cows, especially for the quantity they give, than for their fitness for grazing, or aptness to fatten. These latter points become more important in the Western and some of the Southern States, where far greater attention is paid to breeding and to feeding, and where comparatively little attention is given to the productions of the dairy. ”

“ More than a million head of cattle could have been fed on the wild hay that went to waste last year. Hundreds of thousands of acres are literally overrun with rich wild grasses and pea vine. The dairy yield approximated $1,250,000 in 1913, and 50,000 cows could be added without affecting the price of dairy products. The government operates a travelling dairy to instruct new settlers, and manages permanent creameries which produced over three million pounds of butter last year. Fattening hogs on milk adds to the revenue. ”

“ It has to be observed that pig raising does not require either the capital or experience demanded in the case of sheep."
These facts relate in a general way to the industry as it is possible to be carried on in all parts of the Commonwealth. A dairy man or mixed farmer finds that the carrying on of his work at a maximum of profit involves the growth of a number of different crops with which to supplement the rations of his dairy herd. Peas, barley, wheat, maize, pumpkins, carrots, mangolds, lucerne, rape, and other crops are more or less used for a succession. ”

“ No branch of agricultural interests has changed so much and received such an impetus, especially within the last five years, as the dairy. Entire new modes of making butter and cheese and of setting milk have largely taken place of the old ones. Competition in making dairy products becomes keener each year, and every process by which the labor can be lessened, or the products be cheapened, meets with recompense. ”

“ Adding to this the skim-milk, butter-milk and whey, at their proper feeding value, and the calves dropped yearly, the annual aggregate value of the produce of the dairy cows exceeds $500,000,000, or is more than one hundred million pounds sterling. Accepting these estimates as conservative, they show that the commercial importance of the dairy industry of the United States is such as to justify all reasonable provisions for guarding its interests. ”
