“ But for fullest happiness, those who are predominantly Alimentive—that is, those in whom the Alimentive type comes first—should marry, as a first choice, those who are predominantly Muscular. The Muscular shares the Alimentive's ambition to "get on in the world" and at the same time adds to the union the practicality which offsets the too easy-going, lackadaisical tendencies of the Alimentive. ”

“ His Pet Aversions
¶ Whereas the Alimentive avoids people he does not care for, the Thoracic is inclined to betray his aversions. He occasionally delights to put people he dislikes at a disadvantage by his wit or satire. The stony individual who walks through life like an Ionian pillar is a complete mystery to the Thoracic; and the pillar returns the compliment. We do not like anything we do not understand and we seldom understand anything that differs decidedly from ourselves. ”

“ Work palls on the Alimentive and monotony on the Thoracic, but leisure is what palls on the Muscular. He may have worked ten years without a vacation and he may imagine he wants a long one, but by the morning of the third day you will notice he has found a piece of work for himself. It may be nothing more than hanging the screen door, chopping the wood or dusting the furniture, but it will furnish him with some kind of activity.
Because he enjoys action for its own sake and because work is only applied action, this type makes the best worker. ”

“ No Guesswork in Nature
¶ Nature has no accidents. With her everything is organized, everything has a purpose, and every part of a thing, inside and out, matches the whole. So the hand of the Osseous and the face of the Osseous match the body and head.
This is also true of every other type. The Alimentive has small, fat, dimpled hands and feet like his body; the Thoracic has tapering hands and feet to match his face and body; the Muscular's body, hands and feet are all square; but the Osseous has a bony body, so his hands and feet are equally bony. ”

“ But the fat man gets this philosophy from the same source that gives him most of his other traits—his predominating system.
Digestion and Contentment
¶ The eating of delicious food is one of the most intense and poignant pleasures of life. The digestion of food, when one possesses the splendid machinery for it which characterizes the Alimentive, gives a deep feeling of serenity and contentment.
Since the fat man is always just going to a big meal or in the process of digesting one he does not give himself a chance to become ill natured. His own and the world's troubles sit lightly upon him. ”

“ These necessities granted, cereal foods, such as well-made bread in variety, and vegetable produce, including fruits, should form a great part of the diet consumed, with a fair addition of eggs and milk if no meat is taken, and little of other animal food than fish. On such a dietary, and without alcoholic stimulants, thousands of such workers as I have briefly indicated may enjoy with very little exercise far better health and more strength than at present they experience on meat and heavy puddings, beer, baker's bread, and cheese. ”

“ In passing, it is interesting to observe the following: the fact that in a mixed fruitarian diet the proportion of the nutrient compounds is such as to satisfy natural requirements is another proof of the suitability of the vegetable regimen to the human organism. It is a provision of Nature that those foods man's digestive organs are constructed to assimilate with facility, and man's organs of taste, smell, and perception best prefer, are those foods containing chemical compounds in proportions best suited to nourish his body. ”

“ The most special feature is an additional vow to keep a perpetual Lent of the strictest kind, not only flesh meat but fish and all animal products—eggs, milk, butter, cheese, dripping—being forbidden, so that the diet was confined to bread, vegetables, fruit and oil, and water was the only drink. ”

“ And now learn, continues the rustic sage,
"In what way and how greatly you'll gain By using a diet both sparing and plain. First, your health will be good; for you readily can Believe how much mischief is done to a man By a great mass of dishes,—remembering that Plain fare of old times, and how lightly it sat. But the moment you mingle up boiled with roast meat, And shellfish with thrushes, what tasted so sweet Will be turned into bile, and ferment, not digest, in Your stomach exciting a tumult intestine. Mark, from a bewildering dinner how pale Every man rises up! ”

“ More particularly defined, food is that material taken into the body in the ordinary process of eating which contains the elements necessary for the growth of tissues, for the repair of the destruction to which the tissues are subjected during the ordinary vital processes and for furnishing heat and energy necessary to life. Incident to the utilization of these elements there is consumed, also, a considerable quantity of matter inextricably mingled with food in a natural way, which takes no direct part in nutrition and yet which is useful, as a mass, in promoting the digestive processes. ”

“ Classification of Foods.—For increasing weight and producing heat, the fatty portions of meat, butter, and lard, together with wheat, Indian corn, and sugar, are best adapted; for muscle-making, lean meat, peas, beans, oatmeal; for brain and nerves, shell-fish, lean meats, peas, and beans. Those who lead an active, bustling life, especially if they take an abundance of out-door exercise, will naturally crave strong food in unstinted supply. The busy brain-worker, who is housed all day, and scarcely rises from his chair, needs to be much more careful in his diet. ”

“ A liberal supply of non-stimulating food—in other words, bread, milk, vegetables, fruits, and a farinaceous diet principally—is far superior for the healthy growth of bone and nerve and muscle than a regimen into which nitrogenized materials—flesh-meat, eggs, etc.—enter largely. ”

“ What is the natural food of man? As an abstract truth, the maxim [1] of the physiologist Haller is absolutely unimpeachable: "Our proper nutriment should consist of vegetable and semi-animal substances which can be eaten with relish before their natural taste has been disguised by artificial preparation." For even the most approved modes of grinding, bolting, leavening, cooking, spicing, heating, and freezing our food are, strictly speaking, abuses of our digestive organs. ”

“ The patient may have any easily digested food that she wishes, such as buttermilk, soup, beef-tea, milk or milk and lime-water, soft-boiled egg, etc. The food should be given frequently in small quantities. ”

“ Abstinence from wine—alcoholic stimulants, we would say at present—and from all animal food is the keystone of the Pythagorean system, which also denounced the shedding of blood, and recommended the use of "food which needs no cooking"—fruit, nuts, honey, milk, and the like. ”

“ Dietetic Treatment.—The meals must be carefully selected, well prepared and daintily served, that all of the psychical benefits from such efforts may be attained. A nutrient beverage such as cream, egg, and vichy, reënforced fruit beverages, malted milk, with egg and chocolate, cereal and milk gruels, etc., may be given between breakfast and lunch, lunch and dinner and before retiring. The meals must consist of the simplest foods that the digestion may not be overtaxed by the quantity ingested. ”

“ It ought to be made an article of diet more often than it is, as the particles it contains tend to purify the blood from the grossness it receives in partaking of animal food; and when taken at the commencement of dinner, tends to assist the digestion of those substances which form the more substantial part of the meal. ”

“ A complete diet may be selected without animal flesh, but including animal products of eggs, milk, cream, and butter, together with vegetables, fruits, cereals, and nuts, yet if the vegetable diet be selected the legumes, the whole of the grains, and nuts must be given their share in each day’s rations. ”

“ When we consider the organization of the human system, the form and arrangement of the teeth, the structure of the stomach and intestines, we are led to conclude, that both animal and vegetable food is requisite, and that a mixed diet is most conducive to strength, health, and long life. ”

“ The cure is obvious. Begin by degrees; eat less animal food—the most tender and young—and drink less strong fermented liquors, for a month or two. Then proceed to a trimming diet, of one day, seed and vegetables, and another day, tender, young animal food;—and, by degrees, slide into a total milk, seed, and vegetable diet; cooling the stomach and entrails gradually, to fit them for this soft, mild, sweetening regimen; and in time your diet will give you all the gratification you ever had from strong, high, and rank food, and spirituous liquors. ”

“ Many people at the ages of sixty and seventy still lead an active life, while others retire from activity at forty-five or fifty. Therefore, the food should conform to the person's mental and physical requirements. If the teeth are poor and the digestive powers weak, the food should be light, consisting mainly of well cooked cereals, baked potatoes, rice, cooked greens, a small amount of meat, raw fruits and raw greens in combination with fatty foods, as salads, milk and buttermilk, toasted breads and soups. ”

“ The diet should be graded to the ability of the stomach to digest and the body to assimilate. Our chief reliance will be upon milk, plain or peptonized, eggs, and beef given in the various forms of acceptable preparations, so as not to impair the tone of the stomach nor clog the appetite by sameness. Such vegetables and fruits as agree with the patient may be allowed. I have tried exclusive diets of milk, farinacea, and meat without marked benefit. All stimulants, tea, and coffee should as a rule be interdicted. ”

“ Incidentally there came up for consideration such important questions as the sources in the food of fat produced in the animal body, the characteristic demands for nitrogenous or non-nitrogenous constituents of food in the exercise of muscular power, and the comparative characters of animal and vegetable foods in human dietaries. ”

“ SCIENTIFIC ANSWER. By aliments are understood the substances which, when submitted to the stomach, may be assimulated by digestion, and repair the losses which the human body is subjected to in life.
The distinctive quality of an aliment, therefore, is its liability to animal assimulation.
ANALYSIS. The animal and vegetable kingdoms are those which until now have furnished food to the human race. ”

“ The midday meal should consist of fresh meat, fish, or poultry, with an abundance of green vegetables and a liberal helping of sweet pudding. The articles of diet which are most deficient in our lists are milk, butter, and sugar. ”

“ The diet should consist as nearly as possible of foods in their natural condition, such as extremely ripe fresh fruits and fresh vegetables, and of the proteid group such as eggs, milk, cheese, gelatin, legumes, and now and then a limited quantity of fish. ”

“ Not only must the body have the right food for each requirement, but it must have each type of food in proper amounts. The meal must be balanced—that is, it must contain energy-giving, tissue-building, function-regulating, and growth foods in right proportions. ”

“ It is one of the leading distinctions which Providence has seen meet for wise purposes to establish, when it was said that he might eat of the fruit of every tree, and the flesh of every clean beast.
When we contemplate the aliments used by men in a civilized state of existence, we soon become convinced that only a small part of our daily food can be eaten in its natural state. Many of the substances used as aliments, are disagreeable, and some even poisonous until they have been cooked. ”

“ If the cause be over-consumption of meat, the patient should be given a breakfast of acid fruits, and nuts and salads; while if the cause be over-consumption of starchy foods, all legumes and grain products of every kind should be omitted, and a diet of subacid fruits, an abundance of green salads, and even some flesh now and then, such as tender fish or fowl, should be prescribed. ”

“ Because the stomachs of locomotive beings appear to have been provided for the purpose of conveying about with the moving animal nutritive substances, analogous in effect to the soil in which are fixed the roots of plants and, therefore, nothing ought to be introduced into the stomach for digestion and for absorption by the lacteals, or roots of the animal system, but the natural bases of simple nutrition—as the saccharine, the oleaginous, and the farinaceous matter of the vegetable kingdom. ”

“ The main articles of diet are indifferent bread and butter, the fag ends of coarse meat, the outside leaves of green vegetables, and tea, and an occasional pennyworth of fried fish and potatoes. Children who are supplied with milk at school, or who are given breakfast and dinner, respond at once to the better feeding, and show distinct improvement in their class work. ”

“ Diet.—Diet should be regulated and consist of light, nutritious and predigested foods. Milk should be prepared in various ways palatable to the patient. Wine and fruits and vegetables in season may be included. For malnutritious patients, malt and beef extracts may be added. Starches prepared in fat, and rich pastries should be avoided. ”

“ Moreover, the fact that the teeth and digestive organs of man, which seem to be fitted both for vegetable and animal food, and the fact that the supplies of food on the earth make it needful to adopt sometimes animal, and sometimes vegetable diet, and sometimes a mixture of both, furnish an à priori argument in favor of a mixed diet. ”

“ A diet of milk, cereals, vegetables, nuts, and fruits, raw or simply cooked, with a small amount of animal foods, will perhaps give [Pg 278] the best results in this climate. Food fried in fats, rich pastries and gravies are the hardest to digest, and better health will usually follow discontinuing them. ”
