Chips

“ Such potato chips were not to be had anywhere else on Crescent Beach. Thin as tissue paper, crisp as dry snow, and salt as the sea—such thirst-producing, lemonade-selling, nickel-bringing potato chips only Mr. Wilner could make. On holidays, when dozens of family parties came out by every train from town, he could hardly keep up with the demand for his potato chips. And with a waiting crowd around him our partner was at his best. He was as voluble as he was skilful, and as witty as he was voluble; at least so I guessed from the laughter that frequently drowned his voice. ”

“ Standing there on the elastic plank, which seems to give more life and vigor to his blows, it springs to the swing of the axe and the chips fly fast. “ Manufacture—Cutch, commonly called in India Kát or Kut, is an aqueous extract made from the wood of the tree. The process for preparing it varies slightly in different districts.
The tree is reckoned to be of proper age when its trunk is about a foot in diameter. It is then cut down, and the whole of the woody part, with the exception of the smaller branches and the bark, is chopped into chips. Some accounts state that only the darker heartwood is thus used. The chips are then placed with water in earthen jars, a series of which is arranged over a mud-built fireplace, usually in the open air. ”

“ Midge declared, scraping the last bit of egg from his tinfoil cup plate. “I’ll give him a piece of my mind!”
“Maybe it wasn’t the tramp,” speculated Chips. He poked the coals with a stick, and having stirred the flames, tossed a crumpled ball of foil to the fire.
“Who else could it have been?” demanded Fred. “We’ve seen no one on this road. Only cars that whiz past at twenty-five miles an hour.”
Chips had fastened his gaze upon the unpainted dwelling owned by the Widow Jones. The old house was some distance away, but visible through the trees.
“Remember that runaway boy?” he reminded the Cubs. ”

“ There was once a shipwright, and he wrought in a Government Yard, and his name was Chips. And his father’s name before him was Chips, and his father’s name before him was Chips, and they were all Chipses. “ When the fat actually smokes, it is burning and spoilt.
If the chips are put in wet, or before the fat boils, they will be sodden and spoilt. A tiny piece of bread may be first put in to test. If this "fizzles" well, the fat is ready.
When the chips are golden brown, lift them out with a slice and lay them on paper to drain. Then put in vegetable dish and serve quickly. They are spoilt if allowed to cool.
MASHED.—Old potatoes are best mashed after steaming. They should be well beaten with a fork, and a little butter and milk, or nut-butter added. ”

“ Chips informed him.
“Chips, I’m not trying to boss anyone,” Dan said, with an effort, holding his temper in check. “Every fellow is supposed to do his share. That’s all.”

Place only one layer of potatoes at a time in the fat. The chips quickly turn light brown; then remove with a perforated skimmer to a colander lined with coarse brown paper, to absorb any remaining fat. Should the fat be the right temperature, the chips will be entirely free from grease. Dust salt over the chips while hot. ”

It was Chips's own term for the money-box in which as captain of the house he placed the various house subscriptions as he received them. He looked distressed. ”

“ The Italian cooks seem to know all these things instinctively, the result being that their fried foods come up to the test given by Mary Ronald, who remarks in the Century Cook Book that properly fried Saratogo chips can be eaten out of hand without soiling one's gloves. ”
