“ I have seen cattle come into Armour's stock-yard so weak and exhausted that they expired in the corrals, where they lay for an hour or two, dead, until they were afterward hauled in, skinned, and put on the market for beef or into the canning department for cans. ”

“ Now from the first day we worked the range, we cut out some steers fat enough for beef, and those cattle were under constant herd night and day, and the men were supposed to handle those cattle so they would gain in flesh while we were holding them—and any cowboy caught running or roping those steers was fired at once—and great care was taken to keep the cattle from stampeding. When we got all through we would have 2,000 or 2,500 head of cattle in the herd. ”

The raising of cattle has now become a source of profit in many sections,—to a greater extent, at least, than formerly—and it becomes a matter of great practical importance to our farmers to take the proper steps to improve them. ”

“ All my cattle are now graded, and while no effort is made to mature them, the advent of cotton-seed oil mills and other sources of demand have always afforded me an outlet for my increase. I have branded as many as twenty-five thousand calves in a year, and to this source of income alone I attribute the foundation of my present fortune. As a source of wealth the progeny of the cow in my State has proven a perennial harvest, with little or no effort on the part of the husbandman. ”

“ In those stockyards they kill thousands of cattle every year to give us beef to eat. When the cattle come to these stockyards they are not tame cattle like the cows we see out in our pastures, but they are cattle that have pastured out on the great broad prairies, and they have seen very few people. ”

“ By such methods the eastern farmer easily keeps at least twice the number of cattle that the average farmer here is now keeping, and still he takes but little more of his land away from other farming operations. The intensive dairyman uses all that he raises for his cows and usually buys some besides. ”

“ In a week or ten days they generally come in with the cattle; and they often round up a mighty herd. Each brand now has one or more representatives, and they watch closely after the interests of their employers. They then prepare to take out of the round-up all the brands that belong to that particular range, brand the calves, and let them go. It again fell to my province to do the buying, and with the number of brands for sale in the country I expected, with the consent of my partners, to make a new departure. I was beginning to understand the advantages of growing cattle. ”

“ You see, sir, the range isn’t so open any more, because people are taking up the land from the government every year; and so there isn’t so much room for the cattle. Besides, we’ve been irrigating the last few years and raising wheat, because by and by almost all the cattle land that’s good for grain will be gone. ”

“ We want cattle for distinct purposes, as for milk, beef, or labor. In a large majority of cases—especially in the dairy districts, at least, comprising the Eastern and Middle States—the farmer cares more for the milking qualities of his cows, especially for the quantity they give, than for their fitness for grazing, or aptness to fatten. These latter points become more important in the Western and some of the Southern States, where much greater attention is paid to breeding and to feeding, and where comparatively slight attention is given to the productions of the dairy. ”

“ The profits of cattle-farming are smaller than those of the sheep-owner, (if the latter have good luck, for much depends upon that,) but cattle-farming is much more safe as a speculation, and less care, knowledge, and management are required. ”

“ As a profitable beast to the grazier, and the feeder, nothing can equal them in early maturity and excellence. For this purpose, the short-horns are steadily working their way all over the vast cattle-breeding regions of the west; and, for the richness and abundance of her milk, the cow is eagerly introduced into the dairy, and milk-producing sections of the other states, where she will finally take rank, and maintain her superiority over all others, on rich and productive soils. ”

“ The Government is authority for the statement that the economical production of beef is the calf, taken at weaning time, not allowed to go back, but kept coming in the matter of feeding, and if this calf is to be taken at that age, you can run twenty per cent more cows on your range, producing an average of fifteen per cent more calves, as against developing a steer to the three or four year old period, in which his individual gain is your revenue in the matter of a carrying charge. ”

“ The object with many seems to be, to see with how little food they can keep the cow alive. From a correct point of view, the milch cow should be regarded as an instrument of transformation. The question should be—with so much hay, so much grain, so many roots, how can the most milk, or butter, or cheese, be made? The conduct of a manufacturer who owned good machinery, and an abundance of raw material, and had the labor at hand, would be considered very senseless, if he hesitated to supply the material, and keep the machinery at work, at least so long as he could run it with profit. ”

“ But the Governments of the respective States afford special facilities by way of importing and placing at the disposal of farmers stud cattle of the highest standards. Private persons are also doing a great deal in importing and breeding high-class animals. Herd-testing associations are becoming more numerous. Farmers are learning that it is profitable to keep milk records and to cull out of their herds the cows that do not give payable yields, and pronounced advancement is being made in this direction. ”

“ Lastly, the encouragement of the improvement in the breed of cattle, and the solution of the problem how best to export them with profit, engage your minds. It is almost certain that although in some parts of our country the cattle must be fed during winter for a longer period than in others, yet with good management and proper co-operation, wherever good crops can be produced, the winter will form no obstacle to the profitable sale of cattle in the European markets. ”

“ The cattle run at large upon the prairies; each animal being branded, they need no herding, and are usually only mustered, counted, and the increase branded in the summer. In the fall, when three or four years old, they are sold lean or in tolerable condition to dealers who take them by rail to Chicago, or elsewhere, where the fattest lots are slaughtered for tinning or for consumption in the Eastern cities, while the leaner are sold to farmers for feeding up during the winter. ”

“ Indeed, the fewer cattle are kept on any place the better, unless the range is remarkably good. When young stock of any kind are stinted of their proper food, and their growth receives a check, they never can wholly recover it. ”

“ Other contemporary reasons for the reappearance of cattle on the home lands were the increased demand for good slaughter animals initiated by the newly established cold-storage and export business and dawning appreciation of the fact that one cannot for ever go on growing immediately successive crops of wheat on the same land. ”

“ But as nature seems to have intended this tract of country for the raising of cattle instead of grain, the husbandman has listened to the suggestion, and in this great barren are found some thousands of the finest cattle which the State affords. Here the horse, the ox, and the swine feed, thrive, and fatten with little expense to their owner; but sheep do not, and never will, thrive on prairie grass, or wet grounds. ”

“ Then, as every clothier must necessarily keep one horse, at least, to fetch home his wool and his provisions from the [Pg 483] market, to carry his yarn to the spinners, his manufacture to the fulling-mill, and when finished, to the market to be sold, and the like; so every one generally keeps a cow or two for his family. By this means, the small pieces of inclosed land about each house are occupied; and, by being thus fed, are still farther improved from the dung of the cattle. As for corn, they scarce sow enough to feed their poultry. ”

“ Beef cattle offer another illustration of the way in which animal products have been increased without increasing the number of animals. Formerly beef cattle were matured in their fourth and fifth years, or even their sixth year. They are now placed upon the market in their second and third years. If animals can be matured in their third instead of their fifth year, it is obvious that a much smaller number of animals must be kept upon the farm in order to provide an equal annual supply for slaughter. ”

“ These three breeds comprise practically all the pure-blooded cattle in the United States used for breeding and for grading up native cattle for beef purposes. In feeding and breeding beef cattle it has been the aim in recent years to reduce the time necessary to prepare the animal for market. ”

“ These by-product industries are, in short, the insurance of the packers against crippling losses, and may be likened to the activities of the up-to-date livestock farmer, who diversifies his operations by feeding cattle and hogs and by keeping fowls, sheep and dairy cows, so that if he loses on cattle or hogs he may offset his losses by better prices for lambs, wool, butter, eggs, poultry, or a money crop. ”

“ It was perfectly apparent to any one familiar with the displays of previous years in this department, that the breeding of fine cattle in this country is, at the present time, attracting the attention and commanding the best and most intelligent care of not alone the farmers who have been bred to their avocation, but of capitalists, who comprehend the great money values involved, and who either of themselves or through their sons have set out to identify themselves with this great interest. ”
