Plant-based diet

Definition and stakes

George W. Hunter,  A Civic Biology, Presented in Problems

“ Vegetarians, then, are correct in theory when they state that a diet of vegetables may contain everything necessary to sustain life. But a mixed diet containing meat is healthier. A purely vegetable diet contains much waste material, such as the cellulose forming the walls of plant cells, which is indigestible. It has been recently discovered that the outer coats of some grains, as rice, contain certain substances (enzymes) which aid in digestion. In the case of polished rice, when this outer coat is removed the grain has much less food value. ”

Rupert H. Wheldon,  No Animal Food; and Nutrition and Diet…

“ The health and patience of vegetarians meet the social, mental and physical tests of life with less disease, and less risk of dependence in old age.
Meat eaters have no advantages which do not belong also to those whose food is vegetable.
Plant food, the principal diet of the world, has one serious drawback; it is not always savory, or palatable.
Plant diet to be savory requires fat, or oil, to be added to it; nuts, peanut, and olive oil, supply it to the best advantage.
Plant diet with butter, cream, milk, cheese, eggs, lard, fat, suet, or tallow added to it, is not vegetarian

Samuel R. Wells,  How to Behave: A Pocket Manual of Republican Etiquette…

“ An unperverted appetite is the highest authority in matters of diet. In fact, its decisions should be considered final, and without the privilege of appeal. Nature makes no mistakes.
The plant selects from the soil which its roots permeate, the chemical elements necessary to its growth and perfect development, rejecting with unerring certainty every particle which would prove harmful or useless. The wild animal chooses with equal certainty the various kinds of food adapted to the wants of its nature, never poisoning itself by eating or drinking any thing inimical to its life and health.
