Chocolate cake

“ Six yolks of eggs and 1 cup sugar, creamed together. Beat about 15 minutes. Add 1 teaspoonful allspice, 1 teaspoonful cloves, 1 cup Baker's chocolate, which had been grated, melted and cooled; 1 cup stale rye bread crumbs, crushed fine with rolling-pin. Lastly, add the stiffly beaten whites of 6 eggs, a pinch of salt and 1⁄2 teaspoonful of baking powder sifted over the batter. Put into a small cake pan and bake half an hour in a moderate oven. When eggs are cheap and plentiful this is an economical cake, as no flour is used. It is a delicious cake and resembles an ordinary chocolate cake. ”

“ As it was the custom for the more intimate friends to bring a cake, a pan of cookies, or a great jug of strong lemonade to such an affair, there was more food than twice this surging group of men, women, and children could possibly consume, so that the boys and girls could keep their mouths full of oily, nutty, walnut wafers and broken bits of layer cake without any conscientious scruples. One of the large kitchen tables was entirely covered with plates bearing layer cakes, with chocolate, maple, shining white, and streaky orange icings, or topped with a deadly coating of fluffy cocoa-nut. ”

“ By leaving out a good table-spoonful flour and adding grated chocolate and flavoring with vanilla you have a very nice chocolate cake, or by stirring in it a cup of grated cocoanut or one of walnut meats it is delicious, or even by grating the peel of an orange and part of the juice, or lemon-peel. If you add fruit you need more butter, say two table-spoonfuls, or it will be crumbly and dry. ”

“ While it is baking prepare some icing as directed for cherry cake, using the two whites of egg left over from the cake. Divide into two portions on two plates, colouring one pink and leaving the other white; flavour the former with a little raspberry syrup, or juice from some jam, and the latter with vanilla, lemon, or a little maraschino liqueur. Dissolve half an ounce of grated chocolate with two tablespoonfuls of water and stir it over the fire till thoroughly smooth and liquid, adding two or three lumps of sugar. ”

“ Add eggs. Sift in sugar gradually, beating constantly. Beat in water and flavoring.
Add sifted dry ingredients all at once. Beat the batter until smooth and well blended.
Pour immediately into a shallow pan (10 by 15 in.) which has been greased and lined with greased paper. Fill the pan to a depth of only half an inch. Bake in a 350° F. oven for 15 to 20 minutes, or until the top springs back when pressed with a finger.
While the cake is baking, melt the chocolate in double boiler. Blend with the cream which has been whipped. ”

“ A very speedy and effective decoration is to sprinkle white grated cocoanut on your pink cakes, and a mixture of pink (coloured with cochineal) and pale green (coloured with spinach juice) on white icing, using a mixture of all three colours on the chocolate. The study of the cakes in some high-class confectioner’s will help you here. When the cake is baked lift it by the paper on to a clean pastry-board, remove the paper, divide each slab of cake across, and then split it open. ”

“ It is important not to have the mixture too dark, and it will be found by experience that it gets darker after the stew-pan has been removed from the fire. When we say light chocolate we refer to the colour of a cake of chocolate that has been broken. The inside is the colour, not the outside. It is advisable sometimes to have by you ready a large slice of onion, and if you think it is dark enough you can throw this in and immediately by this means slacken the heat. Pour the brown roux into a separate basin, and put them by for use. ”

“ Shave into a cup one ounce of Walter Baker & Co.'s Premium No. 1 Chocolate, and put the cup into a pan of boiling water. Make a paste the same as for éclairs, save that instead of one tablespoonful of sugar three must be used.
As soon as the paste is cooked, beat in the melted chocolate. When cold, add the eggs, and beat until light. Drop this batter on lightly buttered pans in round cakes, having about a dessertspoonful in each cake. Bake for about twenty minutes in a moderately hot oven. Serve either hot or cold, with whipped cream prepared the same as for Filling No. 1 for éclairs. ”

“ Cocoa is neither so strong in flavor nor so high in food value as chocolate, but it can be substituted for chocolate when this is not in supply.
19. SPICES.--In many kinds of cake, spices are needed to give the desired flavor. When they are to be used for this purpose, they should be obtained in the ground form and then mixed with the dry ingredients. The principal varieties used in cakes are cinnamon, cloves, nutmeg, and allspice. Sometimes a combination of all these is added to the mixture, but very often just a little cinnamon or a mild flavoring of nutmeg is all that is required. ”

“ Three cakes sweet chocolate, three tablespoonfuls powdered sugar, three tablespoonfuls hot water, two dozen lady fingers. Melt chocolate, sugar and water in double boiler and add half beaten yolks of six eggs. Cook until thick. When cold add beaten whites of six eggs. Line a mold with lady fingers and pour half the mixture on them, then fill with lady fingers, repeating with the chocolate mixture. Made twenty-four hours before served. Just before serving, whip one-half pint cream and put on top of cake. ”

“ Bake in a hot oven for fifteen minutes. When cool, join the layers with White Mountain frosting, and frost the top of the last layer. Any of the fillings given under the head of "Cake Filling" may also be used.
When chocolate is used in cake, it is not necessary to grate it or even to break it into small pieces. It contains a large proportion of fat which liquefies at a low temperature, consequently it is necessary only to heat it slowly to reduce it to the liquid state. ”

“ Remove from the fire and pour one-half of the mixture over the chocolate. Set both dishes on a cake rack, or on something that will allow the air to circulate below the dishes. When the mixture cools a little, get some one to beat one dish of the fudge; add a teaspoonful of vanilla to each dish, and beat until thick and slightly grainy, then put the mixture in a pan, lined with waxed paper, first a little of one and then of the other, to give a marbled effect. When nearly cold turn from the pan, peel off the paper and cut into cubes. ”

“ Mix light and make in two large pound cake forms, propped down with large bricks. When this is half baked, take large piece of thick paper, put over the cake so it will not get too black, and put in heat of about 300 degrees F. When baked, turn over so to get to the bottom. Take some soft chocolate icing with some candy fruit, and pour over the cake. This cake must be kept in a showcase or a closed box so as to keep it away from the air. If kept away from air it will keep soft and fresh for weeks. ”

“ The simplest manner of baking this cake is in two square cake pans. When baked, take from pans and ice each cake with a boiled chocolate icing and put together as a layer cake, or ice each cake with a plain, boiled white icing and, when this is cold, you may spread over top of each cake unsweetened chocolate, which has been melted over steam after being grated. When cake is to be served, cut in diamonds or squares. Or add to the batter 1 cup of chopped hickory nut meats, bake in 2 layers and cut in squares. ”

“ Beat the yolks with the sugar for thirty minutes, using wooden spoon. This continued beating and stirring dissolves the sugar and incorporates the needed air. Add cracker crumbs and spices. Beat egg whites stiff with whisk or whip type of beater. Fold in whites and vanilla. Butter a deep, square cake pan and pour in the batter. Bake in a slow oven for thirty minutes. Increase the heat to moderate for about twenty-five minutes more. Should be light and delicate in texture. Requires no icing, though melted sweet chocolate is sometimes spread over top. ”

“ Cake after cake is thus comminuted, at the rate of a ton per day from a single machine. The shavings are collected as fast as they fall, and passed through a sieve, which reduces them to that coarse powdery form so well known to all consumers of soluble chocolate. It is then put into barrels, and despatched without delay to the packing-room by means of a railway.
That there is something in a name, is as true of cocoa and chocolate as of other things, and the difference of name implies, in most instances, a difference of manufacture. ”

“ Bake 20 to 25 minutes (350°) . Shake few cookies at time in paper bag with confectioner's sugar. Keep tightly covered. Become softer the longer kept.
QUICK CHOCOLATE CAKE 1 C sour milk or buttermilk 1 C brown or white sugar 1 egg 2 sq baking chocolate 2 T shortening 1 t vanilla 1 t baking soda 11⁄2 C flour
Dissolve sugar in milk. Add egg and beat well. Melt chocolate and shortening together. Add other ingredients in order given beating well after each addition. Bake in moderate oven in greased 8" baking pan or in cupcake tins. ”

“ One mix or dough from which can be derived a large benefit and satisfaction is the ordinary wine cake or layer cake mix, from which you can make layers for layer cakes, ten and five cent wine cakes, loaf cakes; adding chopped nuts and nut flavor to part of the mix, you can make nut cakes. By adding melted chocolate to a certain part of the mix, you can make devil’s food cakes, lemon cakes, Boston squares, chocolate and maple squares, raspberry and chocolate drops, cup and currant cakes, and other cakes like nut and cocoanut slices, penny golden-rod squares, etc., can also be made. ”

“ Nine eggs; beat whites and yolks separately. Beat yolks with one tumbler of sugar, add rind and juice of one-half lemon, also of one small orange; add one-half pound ground almonds, add whites and almonds alternately a little at a time. Put in a well-buttered spring form. When finished cover with a chocolate icing. Icing: three tablespoons cocoa, one cup sugar, seven tablespoons milk, a few drops vanilla, one teaspoon butter, put on fire in double boiler, stirring constantly for ten minutes. Then put on cake. This quantity makes a large cake. ”

“ When the child has followed this recipe several times successfully, she can then try baking it in two cake tins. When done and cool, she can put the layers together with the same icing, to which, by adding two teaspoonfuls of cocoa, she will have a nice chocolate filling. When the cocoa is used, she will need a trifle more milk or cream. ”

“ Wishing a light supper, I selected one yeast cake (warranted 104 per cent. pure) , a pint of corned oysters (light weight) , some crackers, and leaf lard, to take the place of butter, and a cake of bitter chocolate. I left a few things unmolested; such as soap, cornstarch, cloves, baking-powder and stove-polish.
My assorted supper went down all right until I tackled the chocolate. Chocolate is a favorite beverage of mine; besides, I wanted a hot drink. To be good, chocolate must be well dissolved. No pot was to be had, save a flower-pot with a hole in the bottom. ”
