Fudge

“ Always the fudge is very good, and I eat and eat with unabated relish until all the little squares are gone. A very little of my fudge has been known to give some people a most terrific stomach-ache—but my own digestive organs seem to like nothing better. ”

“ Stir it in well, then add a teaspoonful of vanilla, and beat up until creamy. The secret of good fudge lies in the beating. Some stir constantly from the time it is removed from the fire until it turns creamy, [46] while others let it stand until nearly cool, and then beat up until creamy. Pour into buttered pan or mold, and when cold cut into neat small squares.
Maple Sugar Fudge
Take two cups of maple sugar, one cup of milk, one tablespoonful of butter, and one cupful of chopped walnut meats. Boil until the mixture forms a soft ball when dropped into cold water, or to about 240 degrees. ”

“ You cannot imagine my surprise and interest then, when I came abruptly upon that explosive, black-typed "Fudge" in the middle of the Star. I have always had a fondness for the word. It is like a breath of fresh air in a stuffy library, and any man who can say "Fudge" in a big, round voice has something in him. He's got views and a personality, even though the views may be crooked and the personality prickly.
With what joy I read that paragraph—and cut it from the paper, and have it yet in my golden treasury. This is it:
FUDGE
A fellow named Wright, who lives out in Ohio, says he can fly. ”

“ Beat until fudge begins to thicken and loses its gloss. Fold in nuts. Quickly pour into prepared pan. For best results do not spread fudge or scrape out of pan. When cold, cut in squares. Makes 2 pounds. ”

“ They viewed each other questioningly and doubtfully.
“Civil Engineer,” mused Fudge. “That’s a funny game. Of course, that isn’t his real name.”
“Let’s get out of here,” said Perry uneasily. “He might come back.”
They went down the stairs and emerged on the sidewalk after Fudge had peered cautiously from the doorway. “I suppose,” muttered Fudge, “we oughtn’t to be seen together. He may be watching from across the street somewhere.” He viewed [101] the windows of the opposite stores and houses suspiciously but without result. In another minute they were seated on Perry’s front steps. ”

“ Will you come around again and see me later?”
“Yes, sir, thank you,” replied Perry. “And Fudge isn’t really sorry you’re not the train-robber, Mr. Addicks; are you, Fudge?”
“Of course not!” Fudge grinned. “Anyway, it was a lot of fun while it lasted!”
“That’s all right, then,” said their host heartily. “Glad you don’t hold it against me. I know that a civil engineer isn’t as interesting as a desperado, fellows, but you drop in now and then and maybe we can scare up some excitement, eh? And if you ever want a nice job of surveying done, why, you let me know, and it won’t cost you a cent.” ”

“ And Fudge, looking unusually belligerent by reason of his inflamed nose, faced them indignantly. “What if we do get beaten by Corwin and Logan and all those little fellows? What we’re after is to smear Springdale, and we’ll do it, too, if we’ll leave Dick Lovering alone and not kick him in the shins every time we get a [195] chance! You make me weary, you gang of grouches!”
Fudge was a hero just now and his words were hearkened to with respect. An uncertain murmur of approval followed, and some laughter, and Grover said: “I guess that’s so, fellows. Let’s leave Lovering alone. ”

“ In cooking fudge and such candies in which you use milk or cream, they will always boil up high on your thermometer at first, but by the time it is cooked enough to register the right degree, you will find it has boiled down enough, so the degree mark will be above the syrup, but you must wet your finger and wipe off the glass before you can read it. ”

“ If it stays together in a soft ball and does not fall apart when you lift it out of the water with your fingers, then the Fudge has cooked long enough. Be sure to take candy off the heat while testing. ”

“ These she let boil until a little of the syrup dropped in cold water formed a soft ball, then removing the saucepan from the fire, she placed it in a pan of cold water, added the vanilla, beat the fudge until it was thick like heavy cream, and poured it in the buttered pan and marked in squares. ”

“ Bob Fudge is almost too suffocating a coxcomb, even in description, with his stays and patés; and Miss Biddy Fudge, with her poke bonnet and her princely lover, who turned out to be no better than a man-milliner, is not half so interesting as a certain Marchioness in the Twopenny Post Bag, with curls ‘in the manner of Ackermann’s dresses for May, and her yellow charioteer.’ Besides, Miss Biddy’s amour ends in nothing. In short, the Fudges abroad are not such fat subjects for ridicule as the Fudges at home. ‘They do not cut up so well in the cawl ”

“ Spring Fragrance to himself. “Why should I pay any attention to him? This is America, where a man may speak to a woman, and a woman listen, without any thought of evil.”
He destroyed his cousin’s letter and re-read his wife’s. Then he became very thoughtful. Was the making of American fudge sufficient reason for a wife to wish to remain a week longer in a city where her husband was not? ”

“ So I never got a chance to learn to make fudge or anything like that."
"Well, I'll teach you, when we get a good chance, Bessie," promised Dolly, seriously.
"I'll be glad to take lessons from you, Dolly," she said. "I think it would be fine to know how to make all sorts of candy. Then, if you did know, and could do it really well, you could make lots of it, and sell it. People always like candy, and in the city a lot of the shops have signs saying that they sell Home Made Candy and Fudge. So people must like it better than the sort they make in factories." ”

“ Addicks had delivered the last of his advice he suggested that Perry accompany him across the river and watch him work. “The walk will do you good,” he said. “If you get bored you can come back whenever you like.”
Fudge came in before they got started and went along. Fudge was about as nervous as a block of wood. He was very full of the impending affair but quite untroubled. The only thing that seemed to really matter to Fudge was his chance of beating Falkland in the hammer-throw. Whether he out-tossed the Springdale fellows apparently failed to bother him. The boys remained with Mr. ”

“ When Betsey began to add nuts, raisins, figs, dates, marshmallows or marshmallow cream to the different kinds of fudges, mother at first thought it unnecessary to re-write the quantities and directions, but Betsey exclaimed, "Why, mother, it will be so much easier if I have each recipe written out all by itself, then I won't need to keep referring back!" ”

“ And earth's base built on stubble."
The chief Dramatis Personæ in the Fudge Family are,—Comic Personages, Miss Biddy Fudge and Mr. Bob Fudge, her brother: Mr. Philip Fudge, their father, and a friend of Lord Castlereagh, a grave gentleman; and a Mr. Phelim Connor, who is a patriotic, or, which is the same thing, a tragic writer. Miss Biddy Fudge takes the account of poke-bonnets and love-adventures upon herself; Mr. ”

“ An odor of pickle, of rotting vegetables, of red herring, persists around us, impregnating our garments. It is intolerable. Then each of these creatures, heaped up on their chairs like bundles of dirty linen, plunges into the narration of some dirty action, some scandal, some crime. Coward that I am, I try to smile with them, to applaud with them; but I feel something insurmountable, something like frightful disgust. A nausea turns my stomach, forces its way to my throat, leaves a bad taste in my mouth, and presses my temples. ”

“ As the last notes of this extract are the commencement of the first episode, we have here the complete exposition of the fugue. With the indications we have given of the entries of the subjects, &c., the student will easily understand it. In a fugue for so many voices and with so many subjects, it is not needful that each subject should be heard in every voice in the course of the exposition. ”

“ When you see a thin blue fume rising from it, it is hot enough. That is the sign. If you do not look closely it may escape your notice, for it is only a thin fume you want, not a thick smoke. If we were to let the fat remain till it smoked it would be spoilt."
"Oh dear, how careful we have to be!" said Margaret.
"The slices of apple are quite ready, ma'am," said Mary.
"And the batter is quite ready," said Margaret.
"I see too, that cook has put a dish with kitchen paper on it for us to put the fritters on as they are fried. And there is the fume. Do you see it, children?" ”

“ These are the Fughetta and the Fugato.
350. The word "Fughetta" is the Italian diminutive of "Fuga," and merely means "a little fugue." It is a term of somewhat vague application; and it is impossible to lay down a hard and fast line of distinction between fughetta and fugue. For example, among Bach's works for the Clavier, we find a so-called 'Fughetta' in E minor, beginning
&c. ”

365. What are fogs?
Fogs are clouds formed near the earth's surface; but London fogs are distinguished from clouds by the fact that they embrace in their vaporous folds the smoke and volatile matters imparted to the air by the operations of man. This is also the case with fogs generally that arise near large towns. ”

Fumigation, Ace′tic. Syn. Fumigatio acetica, L. The fumes of strong vinegar or acetic acid, obtained by heating the liquid over a lamp, or by sprinkling it on a hot shovel. Aromatic vinegar in this way yields very refreshing fumes, and was formerly thought more efficacious than simple acetic acid. ”

“ Sometimes a few grains of dusty looking powder are made to vanish into smoke with an explosion that shakes the ground for yards; and sometimes waste rubbish is transformed into delicious scents, resembling those which are produced from the violet and the rose. ”
