“ Non-Alcoholic Drinks.—The same remark applies to a good many of so-called temperance beverages. Of these again it is hardly proper to speak as liable to adulteration. So-called soda-water is very often devoid of soda and is only carbonated water, but the term “soda-water” is a survival from the times when this was a medicinal beverage and when soda was prescribed to be present in definite amount by the pharmacopoeia. Potash and especially lithia waters very frequently contain only mere traces of the substances from which they derive their names. ”

Some people are fond of the popular remedy of hot water and soda. Their faith in its efficacy is likely to be increased by the good display of gas which is sure to follow. As any cook knows, soda and acid always fizz. The soda is broken up by the hydrochloric acid of the stomach and forms salt and carbon dioxid, a gas. ”

“ Soda and Potash.—Unlike the preceding bases, the soaps formed by soda and potash are soluble in water, and constitute the soap of commerce. These reagents are always used in sufficient quantity to combine with the whole of the fatty acids contained in an oil or fat, though doubtless, by the use of considerably smaller quantities, under pressure, complete resolution of the fatty matter into fatty acids and glycerol could be accomplished. ”

“ Household Soap—No. 1.—Slack six pounds of fresh quicklime in a tub, using just enough water to make it crumble perfectly. Dissolve six pounds of washing soda in four gallons of warm water. Add the slacked lime and the soda solution together and stir well, adding four gallons of boiling water and keep on stirring till mixed, then let it settle. Pour off the clear lye and you have home-made caustic soda. Put this lye into a clean kerosene tin over a gentle fire and add to it 12 pounds of clarified grease, stirring continually, then dust in, a little at a time, four ounces of powdered borax. ”

“ SODA CREAM Take three pounds of granulated sugar and one and one-half ounces of tartaric acid, both dissolved in one quart of hot water. When cold add the well-beaten whites of three eggs, stirring well. Bottle for use. Put two large spoonfuls of this syrup in a glass of ice-water, and stir in it one-fourth of a teaspoon of bicarbonate of soda. Any flavor can be put in this syrup.
MULLED WINE Put cinnamon and allspice (to taste) in a cup of hot water to steep. Add three eggs well beaten with sugar. Heat to a boil a pint of wine, then add spice and eggs. ”
