“ Knives.--Hunting-knife.--A great hunting-knife is a useless encumbrance: no old sportsman or traveller cares to encumber himself with one; but a butcher's knife, carried in a sheath, is excellent, both from its efficient shape, the soft quality of The steel, its lightness, and the strong way in which the blade is set in the haft. ”

“ You cannot have forgotten the singular knife which was found in the dead man's hand, a knife which certainly no sane man would choose for a weapon. It was, as Dr. Watson told us, a form of knife which is used for the most delicate operations known in surgery. And it was to be used for a delicate operation that night. You must know, with your wide experience of turf matters, Colonel Ross, that it is possible to make a slight nick upon the tendons of a horse's ham, and to do it subcutaneously, so as to leave absolutely no trace. ”

Where it is necessary for a knife to conform to shape in paring, a flexible knife is more comfortable than a stiff one. ”

“ I daresay that has been used for anything, from primitive carpentry to cutting tobacco. The one knife always does for everything.”
We continued our conversation while Dennis idly examined the knife, opening it and studying the blade absently. ”

“ The entire blade should pass lightly over the steel. Return the knife to a position on the opposite side of the steel and repeat the same motion.
To test the knife for sharpness and smoothness of edge, run the edge of the blade lightly over the flat of the thumbnail. If the knife slides easily, it lacks the proper sharpness. A sharp edge will dig into the nail and a rough or wire edge will rasp the nail.

“ On taking up these, each owner of the knives will imagine that his remains on the table and his neighbours’ are being used. Even if he suspected a substitution, that would not account for the trick.
Ingenious Variation.—One knife is laid on the cup with its handle outside to maintain the balance; a long knitting-needle, fastened to the knife-handle with a lump of sealing wax, while a leaden bullet at the other end and knife point serves as counterpoise. The glass table is used, and the Magician withdraws to a distance. All of a sudden though, the knife leaps off from the cup. ”

Do not be induced to encumber yourself with one of those ornamented, highly polished, useless abominations popularly known as hunting knives; they are worse than useless, and only serve to exasperate the owner. For general rough and ready work, nothing is better than a strong well-made butcher’s knife. The blade should be continued through the handle, which is formed by pinning two cheeks of hard wood or horn together. The hand grip should be long, and the steel sufficiently soft to be cut by a common hand saw file ”

“ Now this knife was a splendid one, though half the blade was gone, and the handle was a little cracked; and Anders knew that one is almost a man as soon as one has a jack-knife. But still it did not come up to the new cap which mother had made. ”

“ Care of Table-Knives.—Be careful to keep a good edge to your knives, and do your utmost to preserve them from notches, especially the carving-knife, otherwise a hot joint may get cold while the knife has to be sent from table to be sharpened. A keen edge may be given by cleaning alone, if care be taken, in passing the knife from you, not to let the edge lean on the board, but, in drawing it towards you, to lean with a little pressure on the edge. ”

“ The heavy, wide-bladed knife cleaves to the surface of the meat and makes it a practical impossibility for any ordinary mortal to push it through. The narrow blade is what you must have, as it requires less strength and cuts therefore more efficiently. The knife with the almost scimitar formation makes it simple to cut around a bone. ”

“ It should have a handle easy to grasp, a long, thin, sharp, pointed blade, and be of a size adapted to the article to be carved and to the person using it. A lady or a child will prefer a small knife. Be as particular to have the knife sharp as to have it bright and clean; and always sharpen it before announcing the dinner. It is very annoying for a person to be obliged to wait and sharpen the knife, or to turn the meat round to get it into the right position. Never allow a carving-knife to be used to cut bread, or for any other than its legitimate purpose. ”

“ Section knives, during the process of sharpening, are subjected to three distinct processes: 1, Grinding; 2, Honing; 3, Stropping.
Grinding is one of the most important, though it is probable that it will rarely be undertaken by the microscopist himself. More knives and razors are spoiled in grinding than in any other way. We have now in our possession an excellent knife, which in an evil hour we entrusted to a New York cutler, and received it back utterly ruined, the temper being entirely taken out of the blades! ”

“ But since the steel which we use is limited in its hardness and its power of resisting crushing and 79bending influences, the blades of our knives must have a certain strength or thickness, depending upon the character of the material to be cut. For very hard substances the knife must be stout and the edge ground to a comparatively obtuse angle; for moderately soft substances, such as wood, the angle may be more acute, while for very soft tissues the thinnest blade and the sharpest edge are most suitable. ”

“ Some persons prefer to turn the knife over, drawing it first from the left hand and then toward it, sharpening each surface alternately on the same edge of the steel. This is more difficult to do, as you cannot so surely keep the blade at the same angle,—and this is the most important point. If held at any other than the proper angle, either no edge is made, or it is taken off as soon as obtained. ”

“ If I make the knife, and you answer with the handkerchief, you pay forfeit, for my knife will cut your handkerchief; if I make a stone, and you make a knife, out of the game you go, for my stone will ruin your knife. ”

“ With a sharp knife, a small strip of leather and a bit of strong string any boy can make this simple puzzle. It is easier to make, however, than it is to do, as the boy's friends will discover. Fig. 9 will show how it is made. A strip of leather five and a half inches long, an inch and a quarter wide at one end and five-eighths of an inch at the other, is first cut. Then, starting at about five-eighths of an inch from the narrow end, cut with a sharp knife two slits down the middle of the piece three-eighths of an inch apart and three inches long. ”

“ The last operation to which the knife is subjected is that of stropping, and as the blade should be stropped after every section, it becomes important that our tools should be good and that we should know how to use them. By having two or three knives we can always avoid grinding and honing the blades ourselves, for it is then easy to hire the work done, and half a dozen knives will last a careful worker a long time with merely the aid of a good strop. ”

“ A knife is a broad, sharp nail projected; the saw is a set of nails, or perhaps teeth; and the primitive hatchet was a finger-nail and looks very like a talon, as did its maker's finger. The fist is a hammer. ”

“ Tapping Knives.—The choice of a tapping knife is a subject upon which there is much divergence of opinion. This must be so because no known knife has such apparent outstanding superior features or claims as would enable one to settle the point. Moreover, the personal factor is so large that, as far as the knives in common use are concerned, it appears to exert the greatest influence. ”
