“ A good refrigerator is a jewel, and it is the first requisite to be considered. It must be insulated well enough to keep out hot air and hold in cold. It must be seamless and smooth in its linings. The air circulation must be continuous. The temperature inside must never be higher than an average of 45° and rarely that. In such a refrigerator one should be able to keep matches dry and butter must never absorb any of the charm of the onion.
If you have such a refrigerator, keep it by all means, and install the ice-making machine. ”

“ The refrigerator consists of a double frame of wood, with the space between filled in with charcoal. The bottles of wine are placed in little tin cases left for them, and ice is [Pg 148] put between the cases. Below the ice is a tin grating, through which the melted water runs, and is let off when requisite by a cock. The box is made to hold two bottles of wine on one side, and a bottle of water and a glass for butter on the other.
The American refrigerator is another contrivance of the same nature, which will keep the ice unmelted for a fortnight even during the hottest weather in summer. ”

For the small family, buying just what is needed for the day and no more is the best. ”

Keep slices of bread for toasting, pieces of bread, to dry for crumbs, with special receptacles for each. Return pieces of cake to the cake box. Muffins may be reheated. Toast may be kept to serve under eggs or meat.
All butter should be saved. ”

“ Place covered can or containers into refrigerator freezing compartment for 1-2 hours. It may be necessary to temporarily adjust your refrigerator's temperature control to a lower than normal setting in order to get the processed mixture to set up firmly. ”

“ Refrigerator Vessels.—On board the fastest steamships plying between our Atlantic ports and Europe, are found extensive refrigerator compartments. Dressed beef and mutton are exported in large quantities, as well as fruits, vegetables, dairy products and oysters. The temperature, for meat, is maintained a few degrees below the freezing point. Air machines are principally used on the ocean, the brisk circulation of air which they maintain being an advantage. ”

“ Under normal conditions, your Frigidaire refrigerator will automatically provide the right temperature for keeping foods good to eat. However, for special purposes, temperatures which are lower than normal may be required. These are described below. The Cold-Control is located at the upper right hand corner of the food compartment. To change the setting of the Cold-Control, simply turn towards you for colder temperatures, away from you for warmer temperatures. ”

“ Dip fruits that darken in lemon juice. Pieces of fruit should be large enough so they can be identified. Many of the smaller fruits and berries can be left whole or halved. Allow 1⁄2 cup fruit per serving. Handle salad foods lightly. Do not mix excessively, or packing and bruising may result. Keep salads in the refrigerator until ready to serve. Long waiting in room temperature causes them to lose their crispness. It is good practice to chill the salad plates in your refrigerator before serving the salad. This applies especially to fruit and gelatin salads. ”

“ It is the duty of the housewife to unpack and properly put away all foods as soon as they are delivered.
Place butter, milk, oleomargarine, shortenings, and frying mediums, eggs, and meat, as well as other perishables, in appropriate receptacles and put them in the refrigerator. Meat should be unwrapped, placed on a plate and set in the refrigerator, but never directly on ice. Fresh salad materials should be cleaned, wiped dry, and put in a salad bag, in a cool place. ”

“ Milk is often spoiled in too warm temperatures in refrigerators, and also in unclean refrigerators. Many cases of sickness are caused by it. The refrigerator should carry a temperature of near 50 degrees F., and be absolutely clean, and the compartment for the milk should be absolutely separated from other food compartments. ”

“ If A transfers to the refrigerator less heat than B takes away, the refrigerator will grow colder and colder, and, since for the purposes of this discussion all other bodies may be assumed to be at the same temperature as the source, this will present the case of a machine producing mechanical effect while taking heat from the coldest of surrounding bodies. ”

“ Value of Ice in Transportation.—It is difficult to imagine the state of affairs which would ensue upon a withdrawal of all refrigerator service upon our railways. The amount of privation and actual suffering which would follow would be felt directly in every community in the land. “ It is not practicable, in any case, to cool the wort sufficiently on the cooler to bring it to the proper temperature for the fermentation stage, and for this purpose, therefore, the refrigerator is employed. There are several kinds of refrigerators, the main distinction being that some are vertical, others horizontal; but the principle in each case is much the same, and consists in allowing a thin film or stream of wort to trickle over a series of pipes through which cold water circulates. Fig. 5, Plate I., shows refrigerators, employed in Messrs Allsopp’s lager beer brewery, at work. ”

We never put nice china dishes in a refrigerator, for fear of breaking them; this heavy, yellow ware is just the thing, and a saucer can go over each bowl. Do not keep both food and germs in the refrigerator. To prevent musty smells and keep air of refrigerator pure and sweet, place a bowl containing sponge sprinkled with Platt's Chlorides where food is kept. Wash sponge occasionally. ”

“ Ice cream frozen in a household refrigerator usually employs special ingredients such as whole eggs, egg yolks, gelatin, corn syrup, flour or cornstarch, or hot syrup poured over egg yolks or whites to counteract the formation of ice crystals. These ingredients add body and richness and contribute to the smoothness 6 by producing finer ice crystals. They also increase the amount of air that can be incorporated, resulting in a greater volume. Combinations that are too sweet will not freeze firm in a refrigerator. A good proportion is 1 part sugar to 4 parts liquid. ”
