“ If the gravy is too thin, add browned flour and boil it up again. Some persons use red wine, but it is very good without. Half the quantity of meat and stuffing for a small family.
Stewed Brisket of Beef.
Put three or four pounds of brisket into a kettle, and cover it with water. Take off the scum as it rises. Let it boil steadily two hours. Then take it from the pot and brown it with butter in a spider. When it is browned on every side, return it to the kettle, and stew it gently five hours more. Add more water if it boils away. Put in a carrot and a turnip or two, cut small, an onion also

“ When nicely browned, they are done; but do not allow them to blacken.
BEEF, Brisket of, à la Flamande.
Ingredients.—About 6 or 8 lbs. of the brisket of beef, 4 or 5 slices of bacon, 2 carrots, 1 onion, a bunch of savoury herbs, salt and pepper to taste, 4 cloves, 4 whole allspice, 2 blades of mace. Mode.—Choose that portion of the brisket which contains the gristle, trim it, and put it into a stewpan with the slices of bacon, which should be placed under and over the meat. Add the vegetables, herbs, spices, and seasoning, and cover with a little weak stock or water
