The citrates are a numerous class of salts, the most soluble of which are those of the alkaline metals; the citrates of the alkaline earth metals are insoluble. Citric acid, being tribasic, forms either acid monometallic, acid dimetallic or neutral trimetallic salts; thus, mono-, di- and tri-potassium and sodium citrates are known. On warming citric acid with an excess of lime-water a precipitate of calcium citrate is obtained which is redissolved as the liquid cools.

Acetic acid in the form of common vinegar, even when much diluted, attacks and dissolves metallic lead, if by exposing the surface of the fluid to the air, a constant supply of oxygen be maintained to produce oxidation. The citric acid will attack it under the same circumstances, but acts more slowly. In a solution of five grains of citric acid in twenty-four parts or two drachms of water, three lead rods lost two grains in weight in nine weeks. The greater part of the citrate of lead separated slowly in white powdery crystals

Twenty gallons of good lemon juice will afford fully ten pounds of white crystals of citric acid.
Attempts were made both in the West Indies and Sicily, to convert the lime and lemon juice into citrate of lime, but they seem to have failed through the difficulty of drying the citrate for shipment.
The crystals of citric acid are oblique prisms with four faces, terminated by dihedral summits, inclined at acute angles. Their specific gravity is 1·617. They are unalterable in the air. When heated, they melt in their water of crystallization; and at a higher heat, they are decomposed.
