16. CONTAINERS FOR JELLY.--Various types of receptacles in which to keep jelly are in use, some turning out more attractive molds than others. The shape of the mold, however, is a matter of minor importance. Almost any wide-mouthed glass receptacle with comparatively smooth sides will do very well, since the sealing of jelly is not a difficult thing to do. ”

“ I refer especially to canteens and water-bottles. The water-bottle of wicker differed little from the boiling-basket. It was generally rounder--492-bodied, longer and narrower necked, and provided at one side near the shoulders or rim with two loops of hair or strong fiber, usually braided. (See Fig. 520.) “ The best way in which to care for such foods is to store them in tightly closed vessels. Earthenware and glass jars, lard pails, coffee and cocoa cans, all carefully cleaned and having lids to fit, prove to be very satisfactory receptacles for such purposes. ”

“ The habit of storing feces for twenty-four hours ought to concur and keep pace with a habit of eating one meal in the same period. Household and laboratory receptacles in which fermentation has occurred are emptied and cleaned before fresh material is put into them. Is not the same precaution more essential with the receptacles for digestion and egestion? They constitute our chief physiological economy ”

“ The necessity of storing provisions for the winter and hard times led to the invention of receptacles in which grain, nuts and dried berries might be kept and be safe from destruction by rain and animals. ”

“ This indicates, too, why the basket-bottle was not displaced by the earthen bottle. While the former continued in use for bringing water from a distance, the latter was employed for storing it. Screened windows and doors, and adequate bins, boxes, jars, or other receptacles for storing foods are necessary in keeping foods clean. After one has found desirable places for marketing, it is well to become acquainted with desirable brands of staple canned or package goods. ”
