“ Microwaving is significantly faster, but there's a greater risk of toughness when you microwave breast meat. Breast meat is fairly dry to begin with, and you don't have a whole lot of latitude between overcooking and undercooking. With breast meat, there's a trade-off between the speed of microwaving and the reliability of frying or roasting. ”

“ Why do you prefer a woolen blanket on a cool night, rather than a linen sheet, merely? Why do you use a cloth holder in ironing? What is the principle of a hot water bottle? Air is a poor conductor. Can you think of an illustration of this? What is the principle of a thermos bottle?
It is not difficult to see how these facts apply in our cooking apparatus. From an oven with metal sides heat is lost by radiation. In a double oven, with an air space between the inner and outer part, some heat is saved. If the outer cover is of some non-conducting material, even less radiation takes place. ”

The advantages of cooking by electricity are apparent to all who have tested them. Food cooked in an electric baking oven is much superior than when cooked by any other method because of the better heat regulation and the utter cleanliness, there being absolutely no dust whatever as in the case when coal is used. The electric oven does not increase the temperature nor does it exhaust the pure air in the room by burning up the oxygen. ”

ELECTRIC RANGE
Cooking by electricity is an ideal method, and the electric range makes it practical. Every housewife should be familiar with its advantages as it provides the most satisfactory results.
The electric range is reliable, efficient and durable. It saves time, work, worry and watching. It promotes safety, comfort and cleanliness. ”

“ In an electrically fitted kitchen what do we see? A clean, bright-looking oven and a hot plate for boiling and simmering, and probably a grill, completed by a plate heater, all standing on a table placed in a good light and conveniently near the sink. The cook may sit at ease peeling apples and put out a hand to alter the heat of the oven or hot plate, or to move a saucepan. If she is a forgetful [180] person, a red lamp reminds her of the fact that she has not switched off the current from any portion of the cooking apparatus no longer needed. ”

“ Cooking by Electricity is now quite practicable, though for the present decidedly expensive. The heat is obtained from the ordinary electric lighting mains, the current being made to pass through wires coiled on iron or steel plates, and embedded in enamel, having the same ratio of expansion and retraction as the metal. ”

“ An ordinary coal heated kitchen-range will answer very well for paper-bag cookery, if a little care and attention be given to the matter. The cook must firmly impress on [Pg 17] her mind that the bags must not be laid on a solid baking sheet, but on a wire grid, which may be cheaply acquired at an ironmonger's; that the oven must be heated to 220° Fahr. before the food is put into it—a cooking thermometer is not an expensive item; and that, though the heat may be lessened after some twenty minutes, the fire must not be allowed to go down and then be built up again to complete the cookery. ”

“ Electric cookers are still more modern, but we have electric toasters, griddles, ovens and ranges of various shapes and sizes, up to large cabinet affairs with heat indicators and clocks by which the cooking may be regulated. The principle used in the cooking apparatus is the same as that used in the car. The current from large wires is fed to smaller wires which offer a sudden resistance, and the heat thus produced soon becomes intense. ”

“ The temperature in a fireless cooker is below boiling most of the time. It is, therefore, a device for simmering food, and should be used for cooking meats, fruits, vegetables and cereal dishes which require or are improved by long, slow cooking.
Since the food has to be shut in a fireless cooker to keep in the heat, fireless cookery is a method of steaming of food. For this reason, it has a slightly different flavor from food baked in the oven, much as fried food differs from roasted food. ”

“ The vitiated air is carried off at the bottom of the room through the open stoves, and also at the top by a register opening into a conductor to the exhausting warm-air shaft, which, it will be remembered, is the square chimney, containing the iron pipe which receives the kitchen stove-pipe. The stove-room receives pure air from the conductor, and sends off impure air and the smells of cooking by a register opening directly into the exhausting shaft; while its hot air and smoke, passing through the iron pipe, heat the air of the shaft, and produce the exhausting current. ”

The only other important scientific condition observed is that the exposed part or collector of the conductor has to be a dark colour, so as to absorb and not reflect the surrounding heat. ”

“ There is one metal—the expensive platinum—which is not corroded by the electric spark.
